    Hey Ralfy, just a quick comment regarding pH (for anyone who is curious about the more chemical aspects of whisky): an acidic whisky is actually a LOW pH, so by adding a more alkaline substance, like the bicarbonated water, you are actually RAISING the pH in the acidic whisky to make it more neutral. A pH of 7.0 is considered "neutral pH"; below that is "acidic" and above "basic/alkaline". Cheers!

      +rockindrop if I might add to the good commentary, the little bubbles Ralfy mentions are most likely CO2 (carbon dioxide), very unlikely Cl2 (chlorine gas). Cheers

    Thank you for an interesting view into the composition of a whisky. You always have an out of the box angle that makes me view whisky in a different way, and it always allows me to see anew just how complex such a simple thing can be. I love the depth to this hobby and you make it that much more enjoyable for me.

    at last..a proper malt.was getting tired of filler content..but what can you do?? with the prices having reached unjustifiable levels...ralfy has to resist the marketng gurus and buy reasonably..as always...still the only reliable whisky reviewer online..with his finger right on the pulse of things.. keep it up brother.good luck with selecting this year's malt of the year.looking forward to it.may we enjoy your views and opinions for many many more years.

    Thanks, Ralfy. I generally steer away from sherry maturation. I like the idea of working the water to add is great. My suggested malt mention: Moldy Malty Mitchell Making Meaningful Malt Emanations from a Mildly Moldy de-Minimus Bothy.

    Ralfy, Thank you very much, I have been watching you adding water to your glass and have always wondered what type of water you were using.I am a water well driller and pump technician and know that water is all different in taste and quality.Last week I was invited to a customers house and had Johnny Walkers Red over ice and that ice was made from a limestone water well..... Excellent, It's all about the water.Merry Christmas To All.

    I always add water, to my Malt Whiskies. After I have had a wee taste of the Whisky. As just about all my bottles(not many) are cask strength. Merry Christmas Ralfy. As well hope you have a great time.

    When I was young, I used to carry pH strips on me (chemistry nerd) and would test pretty much every liquid I came across. I found almost all water (whether treated or well) to be at least slightly acidic, Not much, usually 6.8-6.5 ish, but def acidic.
    And nearly all soaps and detergents are acidic (the non-neutral pH helps with bonding to 'dirt'), so rinsing is pretty important. In the old days, ammonia or sodium hydroxide were common cleaning agents (and are strongly alkaline), but are not very popular today.

    Another water expriment: tap water (rested of course as per Ralfy's recommendation) vs. room temperature calcified kettle-water which one uses to make tea; you mileage may vary.

    sodium carbonate was used in the old times to make soda water, carbonised water, co2 bubbles that is.soda water was and is used with whisky by a lot of people.

    Ralfy! Have you mentioned oak chips and DIY maturation of whisky?
    I soaked some bourbon in American oak chips to get the "first-fill bourbon" effect, (also better bourbon), and aged a young highland malt, and I was impressed with my experiment!
    I plan to soak Port wine in my French Oak chips to experiment with Port maturation :D

    Ralfy, love your reviews, man. I've been a Single Malt drinker for thirty years, but only recently have begun to educate myself on the intricacies of fine whisky. In my admittedly limited experience, I've found the 15 year old Laphroaig to be my favorite, though very pricey in my locale. Any recommendations for similar malts I might enjoy?

    The Singleton is one I don't think you've reviewed Ralfy. Does it not make the 80/100 grade. I have a bottle the soon to be discontinued Singleton of Glen Ord and really enjoying it.

    Dear Mr Ralfy.
    I condone you for not reviewing NAS malts.
    The industry treats the customers really bad.
    Don't they believe that we are capable of enjoying a great malt, even if we know that they have used young malt ?
    They sure ride on the wave of uncritizising high prized malts.
    Shame on them.
    I remember when whisky was unpopular and the complaint from the industry.
    Mothballing, demolishing such greats as Brora, Port Ellen and many more.
    Those days will be back sooner or later and by that time they will be out of quality stock.
    I already see friends stepping of the single malt train and buying high quality rums, tequilas , cognac/armagnac.
    I will stand by the likes of springbank that are genuine brands.
    The downside is that Diaego and the likes won't hesitate to close down Ardbeg , Lagavulin when the profits drop.
    To all independent distillers I urge you to NEVER sell out.

    22yrs n prolly a wee bit of a whack pricewyz I'd Xpect a lot mor of a "tuned whisky".

    Great video Mr. Ralfy! I have been watching your videos for a long time . As a young bar tender I am very interested in spirits especially whisky.I live at a very remote place, the whisky that are available to me are the popular brand like chivas ,johnnie walker(if I am spelling that correctly) mine experience about whisky isn't too much I had chivas royal regal 12 yo , Dalwhinnie 15 yo and Aberlour 12yo . I tried hard to taste it, but I just can't notice the scent of barley or grain in them mostly I can only smell toffee , vanilla and oak I have a relatively good sense on sweet and oak or peat compare to barley and grain. My question is how to sense it better? I have never had a chance to smell barley or grain I have no idea how they are supposed to smell like. Is it still possible for me to get a good taste or develop a better taste on whisky? Watching you videos really taught me a lot of things about whisky .     Tomatin12 has a prety bad overt sherry overcoat. thnk they do a "dip n a rinse" the Sherry is jus 2 prominent!...& it's very inexpensiv SM so th company must also know.

      In one of his reviews Ralfy answered pretty well: no one, they are all different. The same way as there can't be a single most beautiful plant in a botanical garden. They are just to different to pick favorite or best.
