Recreating the Fat Rascal That Earns Betty’s Over 2 Million Pounds a Year

  • 16,000 of these fat rascals are made at Betty's tea rooms every single week, equating to over 2 million pounds a year. So it was definitely worth trying to recreate the little rascal.
    The BBC recently aired a program called "remarkable places to eat" hosted by Fred Sirieix. Fred went behind the scenes in to the bakery and we were able to get a bit of a sneaky peak into the process Betty's follows to make Fat Rascals.
    This is my original Fat Rascal recipe which I've tweaked to encompass Betty's spin on this famous rascal. I'm sure it isn't exactly spot on, but I have a sneaky suspicion that it's pretty close. One thing is for sure, they taste absolutely amazing.

    Equipment:

    Recipe Ingredients:
    150g Unsalted butter
    80g Brown sugar
    Zest from 1 orange
    1/4 tsp of cinnamon
    1/4 tsp finely grated nutmeg
    1 tsp baking powder
    150g all purpose flour
    150g Self raising flour
    2 eggs
    75g mixed peel
    75g currants
    Pinch of salt
    (touch of double cream may be needed to adjust the consistency of the mixture)
    To decorate
    5 glacé cherries cut in half
    15 blanched almonds

    Not having any hope of every being able to visit the UK and try a Betty's Fat Rascal at source, I tried this recipe and it is an absolute winner. The many layers of flavour that come through in the finished product are fantastic. A great big thank you to you for this prize winning recipe. Very well done.

    One of my favorite things here, are the recipes that are completely unknown to me, and this is one! They look amazing, not familiar with a couple ingredients, but another add to my list to try. Cheers!

    Made this recipe 2 times this week! Love it! I did reduce the baking powder the second time though and I also tried the traditional scone method of rubbing the butter in the flour and loved the results even more 😍😍😍

    Sounds about right. I roll out the dough to about 1/2 inch thickness and use a 3 inch round cutter to make the rascals. Otherwise spot on.

    I love local items that are not in the States. History and culture, baked item from your childhood and the memories that just the smell makes you homesick. I am planning on making Christmas pudding.(my mother simply called it Carrot pudding) Growing up it was a tradition to have the steamed cake. I didn't appreciate it until I was much older.

    My first attempt at these little rascals has just come out of the oven. Lovely flavour, light and fluffy as well. When you said 150g was a generous portion size, you weren't wrong, Phil

      Just got home and seen your email about the flour, I'll get back to you in the morning about the other bits too. These fat rascals are great fun and I really liked them. I do think they sit somewhere between a scone and a rock cake, but better than both ;)

    May I know why self raising flour and plain flour? Any difference if just use all plain flour and add an extra 1 tsp baking powder?

    I was at Betty's in Ilkley recently - fat rascals cost £3 each so I've been searching out recipes. The one thing every recipe I've seen online does is use glace cherries. I'm fairly sure Betty's FRs don't use glace cherries. The cherries on their rascals are darker and chewy when eaten. I'm probably wrong, but the closest to the colour of Betty's rascal cherries I've seen online are Amarena cherries.

    Epic. Just epic. They are so so tasty. Agree with others - i think can reduce the baking power by half - but else this is gonna save me a shed load of money. Sorry Betty - your pension will take a hit 😉

    I've eaten loads of these and this is pretty much nob on my missus loves em. Tho on my second bake I upped both the peel and currants to 100grams
