  • China, Chongqing: I was invited to a baijiu factory. Before coming to China I had no idea what baijiu was, and now apparently I am an expert drinker. Not only that, while visiting the distillery they offered me a great Chinese lunch and I've also visited the small town where distillery workers work.
    This traditional Chinese beverage is made from fermented grains such as sorghum, wheat, and rice, and is renowned for its strong, pungent aroma and fiery flavor. Chongqing is especially famous for its unique local varieties of baijiu, which are characterized by a unique flavor that comes from the local water used in the fermentation process. Baijiu is often served at celebratory events and is an important part of the local culture.
