I've made this twice now, and the results were great! I love the combination of flavours and the acidity of the lemon juice pulls everything together. I didn't have 7 spice, but I improvised with coriander, cumin, paprika, cinnamon and lots of black pepper. Definitely use 2 full tsps of salt!

Did you cover with a foil it not, thoughts?
I baked it uncovered for 55-65 minutes until the potatoes are fork tender and the chicken is cooked through!
If you cover the pan with foil, that will trap steam inside and keep the skin from crisping up and it will be rubbery.

Which 7 spice mix? Thai? Lebanese?
It’s similar to garam masala which is Indian, but you can find it at American grocery stores. Get the dark one. Not the red one.
