Supposedly, the beef and especially the fat portions are a higher quality with lower "bad" cholesterol. So it's supposed to be more on the "sushi-side" (rare). I don't know, have never had any. It looks like you could always toss it back onto the grill with a flip of your chopsticks ... don't know what they'd think of that (heh).
