    Wanted to share something with the other commenters: Get asofeteda powder from your Indian grocery and use about a teaspoon prior to boiling. It stinks when raw, but through witchery it elevates any curry to a new level. While at the Indian grocer, also get a bag of fenugreek leaves. Also, if you're feeling lazy, look for Monica's curry pastes. Better than most restaurant curry pastes.

    This is the British version. The actual "Madras" dishes which are from South India are very different. This is so red and overloaded with tomatoes - more like a stew or a goulash. Where are the onions? The gunpowder bit is a special powder prepared separately and added to the dish.
    The authentic South Indian curries are brown in color and the onions/gravy is caramalised giving it a completely different flavor and are cooked very differently compared to your style. Nice effort though.

    Madras is my favourite Al. Just wish I had a curry buddy to cook this for. Unfortunately The Management doesn't want spice in her life although she has forced down the occasional biryani when she had to be polite with friends. Oh the misery. Just have to be happy with the vicarious pleasure of your videos I guess.

    This is now my official favorite curry. Watch that naga paste, a tad too much and your nose empties everywhere, your voice goes sneaky as your nads seek refuge, you get a deep belly burn, and you then only have to wait a couple of hours before your rear end exit gear gets quarterized!! Love the apron Al, would love to buy one. Well done fella.

    I made the gravy and korma today, for 11 people, saved a fortune on what would have been an expensive takeaway, and it was so much tastier, how this hasn’t hit more people no idea, great job and love the videos

    If you live near Bexleyheath there is a fantastic Asian store opposite the Furze Wren Wetherspoon. It's called Alli Bhavan. I used to go to Brick Lane for my supplies, but they have a far superior range and it's only a ten minute bus ride for me.

    Can you make a hara masala dish chicken or fish? Preferably with lots of green chilli an herbs. May not be BIR style but you can make is so. As long as the base doesn't change the colour or taste. I remember having it in India vibrant, hot and rich. Similar heat to authentic mint chutney.

    Could simple veg like onions and peppers be added to this just to make it 1 of your 5 a day. If so, when do you suggest adding them so that they wouldn't affect the flavour too much.

    Blasted this one out today but used normal chicken and doubled it all cz used 5 fillets and if your like me lazy I used a jar as my base gravey was banging and added onions top shelf curry that thanks 👌

      @@leetolley966 yes you can. I make a massive amount, then divide it into plastic containers and store it in the freezer. Just take it out it the night before you want to use it.

    Thanks to you I made my first curry from scratch (chicken methi) today. The base gravy was a little thicker than yours, but I was making a larger amount and it worked beautifully, thick sauce and deep flavours. I'll be trying many more of your excellent and easy to follow recipes. What would your recipe for a vegetable samosa filling be? I've seen it using raw potato and carrot, but also par-cooked. I've a vegetarian friend who'd I'd like to wean off the appalling soft doughy shop-bought simosas he eats.

      I think Al recommends you loosen your base gravy up with more water to get the best consistency.
      If you are interested I have an incredible recipe for a Vegetarian curry which even avid meat eaters love .
      I know it is great because I served it at various Fire Stations for years without getting lynched!!

    BRING BACK JOHN. You could do a show called "Judge John" where you prepare 3 different things and he tastes them and judges or tells you which he likes most (makes it less critical). would work with starters nicely.
    or you could so episodes teaching john how to make his own curry, so as to help bring up issues beginners may have

    Just made this last night. Very good and very quick if you've already got base gravy & tikka. You never seem to use ghee in your recipes. Any reason ?

      Mr Naga is available on Amazon and EBay so I think that suggests it’s safe?
      I buy mine from Banglatown cash & carry in Barking

    My chicken tikka has been marinading since last night, just cooked and stained my basmati and a kilo of mixed powder has been done, along with 8 litres of base gravy. Cannot wait to do this Madras tomorrow 😃👌
