You can hear in his words that was a quest - which is now helping us all His commitment and love to replicate this was an inspiration for me personally. These BIR Guys have helped so much when my fathar passed as the cooking aspect was a personal goal to acheive of mine. I could only have done that with Al tbh. The Tikka recipe is an absolute belter, best i have ever come across in home cooking tbh. Once i perfected it, i bought a hotplate like the restaurants Really great - thanks guys
can you do a small video about the burner you use and if it's necessary, lots of viewers only have induction or electric hobs. Also how long does most of the ingredients last for and best ways to store them as you only use a little bit of ingredients at a time. Love your videos so far, hardest is decision is deciding which to make first 😁

Kolsch is a beer type only brewed in and around Cologne. Fruh is I think the largest brewery. Its light dry and fantastic with curries Great choice and a fantastic curry
I made this Saturday night and really enjoyed it. I used Al's old recipe for the chicken tikka and I may have overdone the amount of spice required, I did marinade it overnight. Most of it came off when cooking the sauce so wasn't so bad!

Top channel and great dishes. My nan was anglo Indian and the whole base gravy thing is a real British Indian restaurant thing, real curries make the base sauce when your making the curry, but that takes a long time so I understand why the base gravy is used. Keep up the good work. I'm making one of her curries now it will take me 3hrs

The Kolsch beers are native to cologne and have to be brewed there. Fruh is probably my favourite of them. But to up your German beer game try Schulteiss. Possibly my favourite lager. Beers of Europe have them.

Hi Al I do your chicken tikka it is delicious do you ever freeze it or cook fresh every time. Is that one serving of the curry you make, as I usually cook for 4 and just double it up. I do wish I lived next door to you you are brilliant thanks for all your great curries
@alskitchen if you're struggling to get a head on your beer it's very likely due to detergent left in the glass (not rinsed enough) or dishwasher rinse aid. Some are worse than others but it's a common cause.
Gvideo and a good recipe. I also make my own homemade Lime Pickle rather than shop bought so I obviously use that, it's lush! (it's easy to make by the way) Keep it up.
Great content Al, I've just ordered my first aluminium pan so will hopefully be cooking up some decent curries soon. One question, do you have to season the pan similar to how you would do a wok? I guess not as you don't actually want it to have non-stick properties!? Cheers and keep the videos coming.
Hi Al, slowly gathering all the stuff together for making my base gravy - first time. I notice you use Kasoori Methi a lot in your recipes but can you tell me what it adds to the flavours. I've used it before, I've grown it from the fenugreek seeds, i've eaten the leaf raw, dried and cooked and I can't really appreciate a flavour. Can you tell me where I'm going wrong? Somehow I want to taste it so I know what it does in a curry. What does it taste like - I can't taste it? Thanks for any assistance. Great channel by the way.
Hi John. Methi, gives an underlying earthy tone to a curry. It's not overpowering but basically creates a subtle accent. Not every spice act as the guitar bass or drums. Some are just a triangle or tamborine. :)
@@AlsKitchen You're probably right again Al. I have a lot to learn regarding spices and herbs. Using your instrument analogy, I normally throw in the whole orchestra when really all I need is a 3 piece skiffle group. When I get surprisingly good results, I never know which spice or herb did the heavy lifting. I made some ginger and garlic puree yesterday just mixed with a little rapeseed oil. Hope it will freeze OK - looking forward to using it in the base gravy. Have a great day. Thanks.

are you using the standard 24cm frying pan no.3 from baashouse or the 24cm from Mastercook in this video (the 2 that you provided in your description links) or is this pan the 26cm high sided no.3 from baashouse? it looks like the 26cm no.3 high sided aluminum wok from baashouse. The one in this video looks more like their 26cm wok perhaps?

My favourite Indian restaurant does a "Special Achari Chicken", my all time go to item on their menu, although they describe theirs as a "sweet tamarind sauce". You've made me want to make up some of your gravy to try this now after subscribing a month ago for future reference.

There are tons of variations between recipes, my our local restaurant "used to" make the best one. Long story short, the recipe changed.
