Recipe :
Hyderabadi Paneer Korma
Preparation Time: 20 minutes
Cooking Time: 20 minutes
Serves: 3-4
Ingredients:
250 gm cubed paneer
1/2 cup yoghurt
5 curry leaves
1/2 tsp turmeric powder
1 tsp cumin seeds
5-6 cloves
1 black cardamom
2” cinnamon
2 dry red chili
5-6 garlic cloves
1 tsp chopped ginger
1 tbsp sesame seeds
2 tbsp refined oil
½ tsp mustard seeds
1 large onion, finely chopped
1 tsp red chilli powder
½ tsp turmeric powder
salt as required
Method:
Heat 1” oil in a pan. fry the paneer cubes till light golden in colour. Remove and set aside.
Heat 1 tbsp oil in a pan. Add the cumin seeds, clove, black pepper, sesame seeds, garlic cloves, red chillies. Sauté till fragrant. Add the chopped ginger and cook till the ginger is fragrant.
Remove from heat cool the spices. Grind the spices to a smooth paste with ¼ cup water.
Heat 2 tbsp oil in a separate pan and add curry leaves and onion to it. Sauté them from a few minutes until the onions turn light brown.
Now, add ground masalas, dry spices and mix well.
Add the yoghurt, 1 cup water and mix well.
Finally, add the fried paneer pieces. Simmer for about 10 minutes or till the oil floats on top.
Once cooked, transfer the dish to a serving bowl and serve hot.
