Ingredients
Red lentils : 1/2 cup
Yellow split lentils (Moong Daal): 1/2 cup
Turmeric powder - 1/2 tsp
Salt - 1/2 tsp
Garlic Cloves: 3
Ginger: 1 inch
Cooking oil: 1/4 tsp
Coriander stalks - a handful
Tadka
Cumin seeds - 1 tsp
White Onion - 1/2 Chopped
Cooking oil - 2 tbs
Salt taste
Tomatoes - 2 Sliced
Spinach - About 2 handfuls
Lemon - 1/2
Method:
Rinse the daals thoroughly and soak them for 15 minutes. Crush the ginger and garlic in a Mortar and pestle. Add a little amount of oil in a hot saucepan and add the crushed ginger and garlic. Saute for a minute. Add the soaked daal to it. Add Turmeric and salt. Mix and add the coriander stalks. Add about a litre of hot water. Let it cook for about 15 minutes until tender. Keep it aside.
In a hot pan, add 2 tbsp of oil. Add cumin seeds, when they crackle, add the chopped onions. Add salt to taste, Mix them well and cook until the onions soften. Add the spices. Add the tomatoes. Let them soften. Finally, add the spinach and mix everything well. Next, pour in the cooked daal. Let it simmer and then squeeze half a lemon. The Spinach Tadka daal is ready. Serve it with fluffy boiled rice.
