Cassia Tora or Senna Tora leaves are one of the favourites of Gowda Saraswat Brahmin (G.S.B.) community. It is called as Tagate Soppu in Kannada and Taikilo in Konkani. During monsoon season in coastal Karnataka, taikilo plants are found like weeds everywhere and can be ignored easily but once the benefits of the leaves are known and the taste their dishes offer is savoured, they cannot be resisted anymore and are plucked, washed, chopped and cooked.
Taikile Dangar or Ambado is a popular G.S.B. delicacy prepared during monsoon season. It is a fritter of Cassia Tora leaves deep fried in oil. It is called as Tagate Soppina vade or vada in Kannada. The hot fritters when savoured while watching rains is a memorable experience.
The leaves can also be dried and stored to prepare fritters during non-monsoon seasons.
Preparing fritters using taikilo is easy. The video shows two ways of preparing fritters. First: Direct way which involves soaking and grinding and Second: A much easier way by making use of ready to use dangar powder mix from Laxmi's Home Kitchen. The fritters tasted awesome. After mixing the powder and preparing a dough, leave it for 15 to 20 minutes to get best results.
