  • The Englert family from south-western Germany has been making bread for 90 years, and now has five bakeries. Their biggest rivals are the industrial bakers and discount supermarkets, who sell their wares for cheap.

    Nothing like a German bakery run by a family who takes pride in their products.They are all very distinctive in every fashion.

    I can say being a made by hand baker now for 11 years. What a small shop can offer is flexibility and variety. I can totally change what and how i do something. My oven is just a oven not part of a production line. Factories are setup to make a consistent set of few products. and retooling and adding new lines is a huge investment. If a customer comes in to my bakery and requests something special. I can usually accommodate the request in a day or 2. To top it off i can alter the style, shape, and additives at any time. A factory is inflexible.

      Untrue I work in a bread factory. While we don't get new products often, sometimes a customer wants to try something new and we are able to make it on the spot. We have all the equipment we need to handle making different products and the way machines are setup now we can acomodate all different shapes and sizes, toppings, proof and cook times etc. Maybe not as flexible as you can be but to say a factory cannot make more than a set amount of products is definitely false. No two factories are the same. Not trying to downplay your skill or anything cheers i'm just saying I know what we can and cannot do and we are certainly capable of being flexible if a customer requests it. All new machines are adjustible and take about 5 minutes for a skilled laborer to adjust. There is no "retooling or huge investment" as you put it. Where you really shine compared to what we do is in small orders. They just are not worth it to us and we will not pick them up. I'm all for the man on the street so to speak making an honest living and we need more of people like you. Where you can make a few hundred loaves and make a profit if we took those orders we would be seriously in the red. It's extremely expensive to operate a factory. We need to average thousands an hour to make profit. You look out for the little guy because somebody has to. We take great pride in the bread we make just as you do.

    You can taste the love and the care in the hand made breads and foods. I support artisan bakers and other artisans along with local farmers because it is better for the local economy, has better quality, supports the environment and while more in cost, the taste is worth it. If we as for more quality and support people who understand food at a slower paced closer to natural source way, we would also provide more jobs and improve our health as we improve our palette.

    I was born in Germany and spent half my youth there and i remember every weekend going to the local baker picking up awesome handmade bread, i dont think my parents ever bought mass produced bread in a grocery store the difference in quality is definitely there.

    I dont like people talking down of factory made bread, they provided affordable food for the poor but if you have more money help your local bakery.

    Sadly, many run their bakerys, especially franchises, using baking mixtures they get delivered from factories. Technically it's freshly baked, but it's an industrial product somehow... The classic bakery is disappearing.

    There is no way the industrial bakers can give the variety of the local baker. When I visit the bakery I have no idea what I am going to buy. Could be one loaf, brotchen or a mixture. THAT is the magic of a baker. Much like a visit to the Metzgerei.

    in Finland industrial bread is more expensive than handmade bread in Germany because Finnish wholesalers and retailers are greedy and they have some kind of cartel agreement...no competition with prices...but if you buy straight from the bakery, handmade bread is sometimes decent priced

    I respect completely the family bakery. Customers need to understand it's infinitely better than mass produced

    This is a very common sight in France, I absolutely love the bakery aka 'boulangerie'... we have an artisan one in the next village. Brilliant, I eat bread every day. Not only am I a normal body size, which flies in the face of the anti bread brigade, but my friends who visit from the rest of the world who have gluten intolerance have zero issues eating bread here.

    Truly many bakers have lost their sense in using chemicals to increase production.
    Sometimes I find factory bread much better than the baker's here in Dubai.

    I want some authentic German Pumpernickel bread. All the pumpernickel bread in stores around me in Metro Atlanta have molasses. It's my understanding that real pumpernickel bread takes 18 hours to bake. The one and only German bakery that used to be near me and has recently went out of business stopped making it because it took too long to bake and no one was buying it. That makes me very sad :( Does anyone know of any videos that shows you how to make authentic German Pumpernickel bread? I want to make a video of me baking some for myself for Christmas.

    during the volcanic activity here our bread been smelling and tasteing not as good its been wonder bread and bunny colonial shop stores for last 4 too fiver years think that its the water supply too the factory or elements in the fields or that rains on it from ocean storms

      No, if that is what you meant: We do not eat plain bread. We rather eat it with jam or sausage or cheese. I never heard of someone who ate plain bread.
