    Using a cut potato n salt will remove rust easier. Burning some potato peels on it will further remove caked on buildup. Then clean or loosen with water and proceed to season regularly

    Yes we always do this after using and before very next use but we use mustard oil

      Yes you can store the kadai after seasoning it like this for long time. Jst that you need to clean it very well when you'll use after long time

    I think no need to season it everytime, when you wash it wipe out water immediately with cloth is necessary after every wash. I do it like this always for my guliyappa pan. No rust so far about 1 year.

      Same here. Been using cast iron kadai and tawa for more than two years. It rusts only when water hasn't been wiped off immediately after washing. After about a year of regular seasoning, now I don't always season & it remains rust-free. We ve to just remember to dry it on stove top soon after washing so that it remains bone dry.

    Use an oven
    Quicker and better method.
    Lodge cast iron products like that one are usually very good, they have a whole section on their website on how to properly care for cast iron.

      @@skinnyrecipes I have replaced non stick with clay pot from Satvic website as it is non glazed but a bit expensive was not able to find unglazed clay pot anywhere. Please make clay pot recipes. Anytime soon.

    Thank you for the detailed information. Just a query, what should we do first when we use it next time..do we need to wash it with soap liquid to clean the sesame oil as we might use other cooking oil?

      @@skinnyrecipes yes, same question. Rinsing with just water won't be sufficient as the oil gets old and sticky on the cast iron pan since I donot use the pan daily so, I have to use a soap...
      after cleaning it with mild soap should I season it with fresh oil again just before cooking food? or just dry the pan and start cooking?

    Ma'am.....after cleaning........I use tissue paper.......to clean ........but everytime the paper comes out heavily stained........is this normal?or should I keep cleaning till the tissue paper is stain free?

    I have a doubt mam..
    When i cook some gravy in the cast iron kadai, the gravy changes its color to dark brown than usual. I transfer the dish as soon as i finish cooking

      This I feel usually happens when we add tomato , tamarind or any sour stuff.. I usually cook sour stuff in steel kadai

      Yeah right ekta. You cant cook veggies or food in which you add tomatoes. What you can do is give the tadka in the iron kadai and then transfer it in steel kadai (or any other kadai) when you have to steam and cook the dish for a longer time.

    I brought a Cast iron Kadhai recently. Based on your video did all the seasoning. My question is post cooking I see food turning black. What am I doing wrong? Something to note:- I did not use Tomatoes.

      That will happen with cast iron kadhai. Food turns black. However it doesn't alter the taste so dont worry about the food getting black

    So the oil doesn't become rancid or gets bacteria if you don't use the pan/pot every day? Also, what other oil can you use (allergy to sesame)? I used to do this to my wok.

      I've left my cast Iron sit for weeks between uses with no problems, as in I've never gotten sick after eating a meal after it sat. The oil gets absorbed in the cast iron and that's what helps prevent rusting as long as it stays dry between uses.
      Oldfashioned Southern way is to use crisco or lard.
      I've reverted to using vegetable oil or Olive oil and both work for me.

    @skinny recipes, nisa ji, it’s also good to always apply /smear little oil after every wash Na. Rather than doing above u shown? That’s what I was told from Zishta

      @@chandrikanair6225 nothing can be done dear. That's the only minus of cooking in iron kadai. The food turns dark color. But food prepared in iron kadai very very delicious and very healthy. Dont cook daals and tomato based curries or veggies in the iron/cast iron kadai

      sounds like poor seasoning of the pan, must clean and re-season the pan
