I used to put sweet paprika and chili in my kimchi, before we got an asian store 😄. The taste is a bit different, but it works.

I keep mine at room temperature for a week before refrigerating. Can you see the little bubbles in the Jar? This means fermentation has started. Good luck 🎉
Ferment at room temp for 3-5 days.. then transfer to fridge

Glass would be best since glass jars can easily be sterilized. I did reuse a plastic jar for kimchi and never had problems!

Can I open the jar everyday during the fermenting process to make sure it doesn't explode?
I don't recommend opening it in the first 48 hours or until you start to see small bubbles. After that, you can open it everyday. I usually leave 1/4 of the top of the jar free since the kimchi will expand as it ferments. Hope this helps ◡̈

Do you pressure cook it? How long will it last ?. Store in refrigerator or cabinet.?
No it’s fermented you don’t cook it. Usually it’s stored for a few days(usually around 3 days) outside the fridge to ferment and then put in the fridge which will stop the fermentation process and will last for a few months if it’s stored properly.

Since it has a glutinous rice flour maybe it contain gluten. But you can skip the flour for sure

You can grind dried red chilli’s for your own chilli powder just remove the stems and most of the seeds.
I have made cabbage kimchi for the first time..and it became soury after 5 days but my kimchi released excess water so im just concerned that is it okay or i made it in a wrong way

This can last weeks, even months! Kimchi is fermented so as long as you use clean utensils every time you get some from the jar (to avoid contamination), it'll last very long!

I make kimchi and it comes out smelling rotten. Like I read a lot of things about how to make it properly and it always turns out the same way. It sucks cause I love kimchi and I want to make it at home!
