    INGREDIENTS:
    Suji (semolina)- 1/2 cup
    Besan (gram flour)- 1/2 cup
    Sugar- 3/4 cup or according to taste
    Ghee (clarified butter)- 1 cup
    Cardamom- 10-12
    Fresh milk- 1/2 cup
    Evaporated milk- 1 small can (170 ml)
    Water- 2 cups
    Orange food color (optional)- as required
    Dry Fruits/ Nuts for garnishing (optional)
    METHOD:
    1- In a big pot / wok heat ghee and add cardamoms.
    2- After 30 seconds, add Suji and Besan, mix well and cook on low flame for 10-12 minutes.
    3- Then add Sugar and 2 cups of water, again cook on low flame for 10 minutes.
    4- Add milk and food color, cook on low flame for 5 minutes.
    5- Add evaporated milk , cook on low flame for 5 minutes.
    6- Now turn the flame to medium and cook for 2-3 minutes until ghee separates and you get the desired consistency.
    Serve hot.
    NOTES
    1- If you don’t have evaporated milk, add 1 1/2 cup fresh milk as a substitute (total 2 cups of milk).
    Or cook 1 1/2 cup fresh milk on low flame until it becomes 1/2 cup. Use it as a substitute.
    2- Keep stirring the halwa at short intervals. No need to stir continuously, just need to make sure that the halwa doesn’t burn.
    3- You can garnish this Halwa with Nuts of your choice, I like it without Nuts.
