What I love about these videos as well as the simple straight forward good recipes, is that you are also making them in a normal person's kitchen. Not some big fancy kitchen that is the size of most people's houses with 1000's of £ worth of kitchen gadgets. They are achieveable for everybody to follow.

But the fact he worked out how much the food cost, he did the research people who do cooking shows assume you have a kitchen stocked with everything from browne rice and five type of pasta to six kinds of flour. I had to try four shops to find corn starch flour and bread flour most shops only stock plain and self raising.

@@raphaelandrews3617 Yes. I remember watching the Jamie Oliver lockdown cooking programme, and he was talking about what he found from his 'corner shop' during the food shortages, and how we can all cook the meal no problem. It was peppers, fresh ginger, fresh coriander, another veg I have never seen. His London corner shop may be 'Taj' but for most of us we just have the Spar and are lucky if they even have a fresh potato.
Most cooking shows and channels are just so out of touch with the normal person.

@@raphaelandrews3617 you can get "vital wheat gluten" online - then use the 'flour calculator' flourmath.bradfordrobertson.com/ to get the 'strength' of bread flour you need. (protein % of your gluten will 'enhance' the lower protein % of your flour)
generally, about a tablespoon of gluten per 250g of plain flour

Definitely bringing back memories of a simpler time. My father would regularly create pastry dough out of, apparently, flour and thin air and then use it for a steak and kidney pie crust and an apple ‘tart’ (as we call them in Northern Ireland. There was sometimes enough dough left over for a small jam tart. Typical of most Sunday’s back in the 1970’s. Thank-you for the video. I will certainly be dusting off my apron this weekend.

@@BakingOnABudget The Apple Pie was delicious Dave. Not as sweet as I thought it would be and, curiously, the next day when me and the missus tucked into it again the flavour had developed and matured making it truly wonderful. I did toss in a couple of cloves btw as here, in sunny South Africa no one ever thinks to do that and it was a taste from my childhood in Kent. Bliss. First helpings we smothered in hot runny custard and the second time with whipped cream. Both excellent.
