Oaxacan mezcal is a traditional Mexican spirit distilled from the cooked and fermented sap of various types of agave plants native to Oaxaca.
Unlike tequila, which is made from a single type of agave (Blue Agave) and primarily produced in the Jalisco region, mezcal can be crafted from over 30 agave species, giving it a diverse spectrum of flavors and aromas. The production process is artisanal and deeply rooted in local customs.
Here's my experience visiting a local community of mezcaleros in Santa Catarina de Minas, Oaxaca.
