heh, przecież on to maszynowo ostrzył w uchwytach i w ogóle... to nie jest ostrzenie z wolej ręki jak na wielu filmikach. Ostrości też tu nie zaprezentował jakiejś wybitnej. Bez problemu znajdziesz filmiki dobrych noży z alliexpres (bodajże xinzuo) gdzie koleś tnie kartki prawie równolegle do ostrza i nie zaczynając od krawędzi tylko samo wybrzuszenie na powierzchni kartki wystarcza do tego żeby nóż jak w masło wchodził... a do ostrzenia noży z wolnej ręki to polecam filmiki z kanału burffection.
Great video! I’m still learning with the T8. My results with the SG-250 and leather and paste are so so (not razor sharp) maybe because my skill isn’t there. If I intend to get the SJ-250, is there any reason I should consider the extra fine diamond 1200? You went straight from the SG-250 to the SJ-250 and it worked great. That seems like a solution.
I audibly gasped when he slapped that chisel into the edge, oh god. I thought he was just gonna drag it across the edge to dull it >_< Though when you have a tormek even a chunk like that aint hard to get rid of I'm sure.

what a delight to finally see someone dressing and using a wet stone, and have it traveling towards the blade as it should. most of the so called tool sharpening videos make me wince when i see sparks flying of the metal on a dry stone that is revolving far far to fast.
Always confused me that many knife sharpeners sharpen away from the edge, yet machininsts sharpening drills/lathe tools etc sharpen properly towards the tool.
@@OllieVK a lot of water stones are soft enough that the edge digging in can actually be a problem, much as you wouldn’t strop a blade on leather towards the edge. I would be surprised if the sharpening tools a machinist used were soft like that.
Jonas, just got my Tormek. Trying to figure out the whole angle piece. How accurate are you with figuring out the existing grind angle and matching it as closely as possible. Thank you.
Hello Richard! Congratulations, that’s one bad addiction you just started ;) I always sharpen knives at 20-25 degrees.. that works for me. But just play around. Less angle means very sharp, but not durable at all. Big angle means less sharp but very durable.

my grandpa used to do this at my village, of course one hand spinning the will and the other sharpening it. No electricity or a holder like this, everything manual and self control.

Hello Raymond Thanks for the question. Well, I think I decided to set the angle at 22 degrees (2 x 14, if I remember correctly), and from that proceeded. And next, you don’t have to strop after using the Japanese stone, as it is way more fine than the honing paste. Among a few things I did wrong in this video years ago, I used way too much much time on sharpening it, and I now know that when sharpening with a Tormek, you have to do the following: 5-10 continuous passes each on each side, then followed by 5-10 strokes one side at the time (switching side every single pass), and so you keep minimising the burr until it brakes off leaving a super razor sharp edge. Does that make sense?

It’s the Japanese stone 4000 grit. I use the stone grader, but other says it will contaminate the fine stone. Well, I’ve never had that issue, but sounds plausible though.
I am just getting into making knives, my Dad always used to use a wet stone hence I have bought one, however what was the device you used to measure the angle?
jolesendk83 may I offer a few words? They are tricky to learn to use right. I saved up for a year, and bought one, but I’m still not using it regularly. I’m hoping these videos and some other ones will set me up a bit better with the necessary skills. The expense isn’t over once you own the machine either, so my advice is to enjoy whatever system you’ve got at the moment, and as Jonas says in the comments, if you start sharpening lots of knives in a week, and it becomes financially more easily within your grasp, then go back to thinking of getting one. In my humble opinion, they’re really not necessary if you’re only sharpening a few tools a week. Plus they’re HEAVY and take up a lot of workshop space, which can be a big deal!

Id recommend u scheppah tiger 2000s, gets the job done for a fraction of tormek, i payed 120euros with scissors knife and chisel or axe holder, to start learning sharpening on a machine, im using ceramic and natural waterstones for my japanese handmade knives, too scared to put the good knives on machine
Well, if you ask me.. and you’re.. go for the T-8.. never ever go for the small one. The reason is it’s way more value for money. It’s a better motor, better machine, more durable and versatile. And you can earn it all back in a matter of days (if you know how to sharpen knives). I’ve sharpened at least 1000 knives, for around 8-12$ per knife. I’ll let you do the calculations, hehe. I’ve a new knife sharpening video coming up in a few days, so stay tuned. Learn from that and go for it.. I swear when I say it’s easy to earn it all back again. Let me know what you decide! 😉💪🏻
Putting a radius on the corners of the stone helps greatly with this problem, also look into increasing the speed, by adding a piece of plastic tube or stainless sleeve to the motor shaft, the faster rpm means you dont have to push down as hard to remove material.

why should the stone travel towards the blade?
@@pjttaylor7186 it stops the unnecessary burr on the honed edge. and when that burr is rubbed of it leaves lots of tiny blunt points

If you only sharpen a few knives once in a while. If you sharpen a large variety of tools, like I do, NOTHING beats it.

What angle did you set for each side?

I use for tomats narrow blade. it doesn't stick! Broad blade use for shredding non-fleshy foods. I use it like a spatula.
