Beleive it or not there are ways to cook Jack Crevalle. All over the world, the most common method is to prepare it in soups (delicious!), but surprisingly it can also be grilled, and is great served as steaks and especially in fish tacos.. The secret is to slice thin, around an inch or a bit less, and quickly cook close over a VERY hot grill, depending on the heat available for no more than a minute or so per side. You baqsically end up with an almost beef steak flavor and texture, believe it or not. Using only salt and lime makes for some really tasty protein, but a number of marinades can produce some really yummy fish too.

Just gotta drive a couple more hours south could hook into reds, snook,tarpon ...A middway point could be corpus and you could hook up with "thresher fishing"

I really like your channel. I grew up fishing the Texas coast for over 40 years. Made custom rods during those years that are still being used today. I had a lot of customers :) I live in Washington now and I've noticed a shift to large spinning gear as opposed to the heavy Fenwicks and Harrington rods we used. I still have a Penn Jigmaster and and Squidder I hope to use again someday but I'm getting older and those long casts and burned thumbs are probably a thing of the past for me. The one comment I have is about the jackfish. I know it's an abundant resource and is probably not being eaten but it shouldn't be a "photo op" for the gaff. A cleanly released jack is a much better outcome. Thanks for the content and keep fishing for those of us who are no longer able to on the Texas coast.
I am so glad you talking about killing GT's for shark bait. There were time you could not buy that bite in the gulf. Especially off the jetty. Seems the Gulf has been nicely rehabbed. Tight Lines.
Hi Skipper that was funny when I had a 77 jeep CJ7 back in the day I always cleaned my wheels after going on the beach or through deep sand or mud. Wow the jetty is loaded it has been a very long time sense I was there looks different I also fished the beaches and the Texas City dike back in the 70's and 80's.

My favorite fishing is on our jetties when theres masses of baitfish and shoals of preadators chasing them and blowing up everywhere and you are chasing them up and down throwing poppers at them and spoons. My idea of fun.

A lil tip- swap out the factory treble hooks ASAP for something better- I suggest either Mustard triple grips or Owner double hooks/Owner treble hooks. Thank me later.

My brother -in - law, my husband and I went surf fishing the first time I went to the beach I made them throw all the companies back because they BBC were to pretty to eat. The next time we went we kept them and when I tasted them , no more throwing them back to eating to throw back.
Been a while since I've fished with both Carlos' due to work. I'm glad to watch you fish with them and catch those Jacks at the surfside jetty. It's a rush catching those jacks. Especially on those rare days that the water is clean like that

If wind SSE , SE or E ( it’s almost of the days ) then you’ll have a good day. * May - October early in the morning ( speckle trouts , Spanish Mackerels , Pompanos. * October and later : Sand trouts , Croakers . Just started fishing like 2 weeks ago and I caught 2 small catfish so far Not happy with the results but all this is very new to me I’m learning as I go exploring different spots. I don’t like to bother people but I have asked some older locals they all say your limited with out boat so I just been driving all over naples coast looking for spots. Il never give up though because I’m falling inlove with fishing it’s first ever hobby besides playing video games and I feel more productive
What type of jacks are you catching? We have yellowtail that are part of the jack family, and they average 18-30 pounds, but some bruisers weigh over 50 pounds and up to 80 pounds. We are on a boat not from the surf which looks like a real test and a lot of fun.

That's the opposite way we catch kingfish on a boat. We put the hurt on them then back the drag off as they get close to the boat
