Now.. let's see if I can replicate this.. seems like you need a) a very thirsty brushes b) some really good cotton watercolor paper c) pro level pigment d) knowledge of exactly when the paper is wet but not too wet to paint the details without them just blending into each other... like when you added the eye and it just stuck there.. without bleeding out.. but you are still able to move the other paint areas around. hmm....
Are all new people to painting, watercolor, oil, gouache, plants and nature, is there no new to painting vids that don't go straight to some form of nature, it's just a question, don't get it twisted or anything

Feet?
Birds feet on the branch, should they be painted too?
Adding feet to the birds can definitely make them look more realistic. To add feet, use a fine brush draw lines for the legs and claws.
