    Just got my Ninja Woodfire XL yesterday. I was looking for a recipe for chicken wings and found this video, so glad. I will be using this recipe later today.

    So I do a dry brine overnight just using kosher salt. I shake the wings and salt up in a tightly lid closed bowl. Then take the lid off and put into the fridge for no more than 15 hours. 12 is ideal but life gets busy. The rule of thumb is 1 TBSP of kosher salt per pound of wings. If all you have is table salt you just cut the amount of salt in half. Once done brining I pull the wings out and put them into another bowl with the following:
    For 1 LBS of wings (double for 2 lbs)
    -2.5 TBSP’s of olive oil
    - 1 tsp black pepper
    - 1 tsp garlic powder
    - 1 tsp onion powder
    - Zest of 2 lemons
    - 1 tbsp lemon juice
    - 1 tbsp of baking powder(makes them extra crispy)
    -4 tsp’s of lemon pepper seasoning
    Cook as you would using the air frier/air crisper setting and the big basket it comes with. Halfway through cooking flip the wings and spray with avacado oil (makes things even crispier). Once complete if you want more lemon pepper seasoning you can put more olive oil in another bowl with the seasoning and toss(shake) them again. It is super important that once done cooking you let them rest for 5-6 minutes as this lets the flavor and juices redistribute back into the meat so your skin is super crunchy and the meat super juicy.
    If you don’t like lemon pepper seasoning just follow this same cooking method but replace the lemon pepper with whatever seasoning you like. If you’re going to use a sauce then once done cooking put wings into a bowl of said sauce and toss/shake them until coated and then let rest for 5-6 minutes for the same reason as above.
    *********NOTE: Avacado oil has a super high flash point as far as cooking oils is concerned so it is what you want to use when spraying the wings on both sides at the halfway point********

      No problem! I’m going to try your 20 minute at full temp method combined with mine. I’ll report back on my results. I have a butcher nearby that lets me buy all flats at $2.50 more per pound so I’ll be stopping by there tomorrow for sure!

    What's the difference cooking in this basket verses the original basket and how come you prefer to cook on the highest settling for air fry? Thanks!

      I use mine under a covered patio without any issues. Only one you may encounter is smoke yourself out. Just use a fan to blow the smoke out. The very top silver piece of the ninja doesn’t even get warm. It’s my beer holder while the lid is closed.

      I promise you it’s not burnt, just super crispy skin which is how I love it. I like my skin dang near like a pork rind
