Personally I think Farmers cheese is even better (and drier) than cottage cheese, but its not always available or economical (for mass production). The curds should stay whole only for texture, but the custard flavor should be absorbed by the curd and you shouldn't taste the cultured milkfat itself. If you try and don't like, use the Farmers Cheese to to make some blintzes (definitely no cottage cheese belongs in them!-).
