Atovastatin 40mg reduced my LDL by 47%, pretty close to the 49% in the table provided.

Which gives the worst side effects? 40mg of Rosuvastatin or 80mg of Atorvastatin? And which is more effective against non-alcoholic fatty liver disease?

    Prof... What about Nystatin?

I like your thinking however Nystatin is classified as an anti-fungal and therefore does not have a role in helping to reduce LDLs/cholesterol. It is simply a coincidence that it has the 'statin' suffix.

Can I switch from rosuvastatin 40 to atorvastatin 40?

I believe the rough equivalence to 40 mg rosuva would be 80 mg atorv, though I am probably too late to be helpful.

How about sandostatin? I've been prescribing it for all these patients that have triglycerides through the roof!

For hypertriglyceridaemia, drug treatment usually entail fibrates such as fenofibrate alongside with regular exercise and dietary interventions. Sandostatin is the tradename for Octreotide, although it has the suffix of 'statin', it does not have a role in the treatment of hypertriglyceridaemia. Sandostatin is usually used for acromegaly, gastro-entero-pancreatic endocrine tumours, bleeding gastro-oesophageal varices.
