Just a tip from a girl with a mediterranean origin & used to chilli food:
Drink milk or have a milk & rice pudding after eating something chilli, it soothes the burning immediately.

That is the normal amount of chilies, or bird-eye chilies used in our sambal belacan in SEA. I know that your chili sauce is good just by watching this. But if you add some garlic, tamarind juice (not much since you already use lots of tomatoes) and most importantly, shrimp paste (belacan), it will be the most awesome sambal belacan or condiment that you'll ever taste! Of course, we don't take just the essence, we eat all of the chilies! XD

I can understand how the heat of chillies can be quite a rush..... but I like to be able to taste other things than just pure spice heat. Hmmm, I'd still give this a try but subject my workies to them too, heh. A friend of mine does chilli pickled eggs using scotch bonnets, I think he's trying them with the Naga Viper too...... he's a bit crazy though you can always tell when he's been at the eggs from the screams coming from the toilets, lols
