I have had some experience travelling in Central and South America, so adding additional info to some of the items seen in this video:
Green chili seen in the video is called "Jalapeño" (ஜாலபிணியோ ). The heat levels can vary a lot based on when it was harvested.
Mexico is very famous for a huge variety of chilis like chilaca, poblano, habanero (seen at 10:46, very hot), serrano, ancho, chipotle and many more. Each pepper is unique and used in specific preparations.
Salsas (சால்சா) are very common condiment, that are served with almost all Mexican dishes. The one with tomato, onion, chili peppers is called "pico de gallo" (பீக்கோ டீ காயோ ), the green salsa is called "salsa verde" (சால்சா வெர்டே ) made with a type of green tomato called tomatillo.
6:28 - Mole (மோலே) sauces are very native to Mexican cooking and they have a huge variety. The dark/black mole sauces typically contain cocoa powder. These sauces are extremely complex (some contain 30+ ingredients) and are cooked for a long period of time to develop layers of flavors.
The dish shown at 6:56 is called "Tlayudas Oaxaqueñas" (துளையூடாஸ் ஓஹக்கானியே), is an Oaxacan specialty. Similar dishes can be found in other Latin American countries and are known by a different name "tostadas" (டோஸ்ட்டாட)
@senthil - I know you are not in Mexico anymore, but pork chicharron (சிச்சாற்றோன்) is extremely tasty and popular in the Latin American world and you should try that. Also try bistec (பிஸ்டேக் ), fajitas, burrito, ceviche, tostones, mundango, mofongo, arros con pollo (latin american style chicken biryani), flan (dessert made with custard), etc. if you get a chance.
