    Ingredients:
    For the caramel:
    140g sugar
    50g water
    For the flan:
    640g whole milk
    220g heavy cream (30% fat)
    6 eggs
    120g sugar
    A bit of vanilla
    Instructions:
    Start by making a caramel with 140g of sugar and 50g of water. Cook until it reaches an amber color and pour it into the bottom of your flan dish.
    In a saucepan, heat 640g of whole milk and 220g of heavy cream until simmering.
    In a separate bowl, mix 6 eggs and 120g of sugar without incorporating too much air. Add a bit of vanilla for flavor.
    Gradually pour the hot milk and cream mixture over the eggs, stirring continuously.
    Strain the mixture to ensure a smooth consistency and pour it over the caramel in the flan dish.
    Prepare a water bath by placing the flan dish in a larger dish with a towel and adding hot water.
    Cover with aluminum foil and bake in a preheated oven at 150°C (300°F) for 50 minutes.
    Once baked, refrigerate the flan for at least 4 hours before unmolding onto a larger plate.
    Tips:
    Make sure to cook the caramel to the right amber color to achieve the best flavor.
    Straining the mixture is crucial for a smooth and creamy texture.
    Let the flan cool completely in the refrigerator for the best results.
