I modified @SophiaMyaCupcakes bombe-mold-for-cupcakes technique by pre-filling and chilling the mold, and then carving out the base of the icing to match the top of the cupcake...simply filling the mold to the top with icing, and then placing the cupcake on top, yields too much icing for my taste!

Thanks again, Debi! This recipe was posted to my Instagram Subscribers, but most readily-available Italian Butter Cookie recipes should work! Just make sure you pipe when the batter is still freshly mixed...as it sits it can begin to get a little shaggy on the edges!
