Try to get it at the Asian grocery store. It is not as common as soy sauce. The closest substitute (although not precisely) is hoisin sauce plus a small amount of sugar.
I never tried to use chicken and potatoes. So I can't be certain of the result because it is a different set of ingredients. Shorten the stewing time for chicken to 40 minutes, no pre blanching required. Give it a try 😊
Hi KP, For the sauce, is it possible to just use Oyster Sauce, Light Soy Sauce, Pepper, Salt & Sugar only ? I do not have the first two sauce in the list. Also, if I cut the beef into small bite size, do I still need to cook them for so long ? Need your help to advice as I really want to try cooking this dish in the near future. Thank You !
Chu Hou sauce is an essential ingredient. Unfortunately, the taste would not be the same without it. (You can skip Hoisin sauce though). I understand this sauce may not be available outside Asia, so I suggest you can try another beef stew recipe without the need of Chu How sauce. tasteasianfood.com/taiwanese-beef-noodle-soup/ Check out this link and ignore the noodles, just made the beef stew.
Where do you live? This info will help others suggest where you may buy these sauces. Chue How Sauce is available in most Chinese Grocery stores in US cities with large Asian population. Should be no problem in UK and Australia also. Chue How Sauce has a unique flavor that has no substitute. You can come close with Soya Bean Paste, but it's still not the same. To reduce cooking time you can make it like a pot roast. Use oven proof casserole and bake at 350F / 180C for about an hour. Time depends on the meat quality and quantity. Use residual heat in oven so don't remove at the end of 1 hr; leave it in the oven to cool down. I usually make this dish at night and set my oven to turn off automatically. Done by morning.

The water required depends on the heat of the stove and also whether you put the lid on. I suggest you cover the pot and use a small flame to reduce the loss of water.

Brisket is the toughest meat, in a slow cooker 6 to 8 hours. Size doesn't matter.
