His real name, as I am aware of, was Arthur Flegginheimer (if I spelled it correctly) He did go by the nickname of Dutch Schultz, though.

Well, we can blame the screenwriters or editors for this omission, but I find it highly unlikely that a contractual hit of this nature is being discussed without consideration of several factors, including: message, conspicuity, anonymity, ambiguity, concealment, etcetera.
On the one hand, you might want everyone in the Justice Department to KNOW this is a gangland hit.
On the other hand, you might just want him to quietly disappear without any suggestion of nefarious activity.
Professional assassins would very seriously take these considerations into account. Failure to do so could elicit disastrous consequences.

Yes and he had to wait for a second ambulance and they had no painkiller, and then he went to the hospital, went into surgery, and then after the surgery lingered for days babbling nonsense, and then he died. His death scene could have been made into an hour and a half movie.

This is more factual. Schultz was killed because of his feeling towards Dewey.

Yes, the Dutch insisted on his way and he paid the ultimate price for doing things his way.
The Dutch paid with his own life. He paid in full.

Why does he call him “the Dutchman” ? ..he was born in the Bronx, from Jewish parents who came from Germany. Therefore he was American, or if you like, German….but certainly not Dutch.

You are right he is not Dutch.
On the other hand, Dutch, Holland, etc. are low level or offspring of Germans.
Such as Spain vs. all other Spanish speaking countries.

Like with "The Lost Dutchman" Mine name, Dutch is an Americanization of Deutsch (German)... so Germans (Deutsch) would be called "Dutch" by a significant amount of unknowledgeable/unworldly Americans.

"....the characters and places portrayed in this story on based on fact."
The word is *based.* It was more dramatic for this episode to stage a rubout on a deserted late nght street, rather than "a chop house in New Jersey".
