      You don't have to explain yourself to anyone brother. If you're within the fish and wildlife regulations then I say grill it up man. And to everyone who's hating on him let the fish and game wardens regulate the fisheries. That's what the regs are for. If they were threatened they would change the laws to protect them much like they did here in Florida with Red Snapper.

    My grandfather had a filet knife similar to yours, and he loved it. It was the first knife I ever used to filet my first fish when I was about 7 or 8. Your video has brought back many memories. RIP granddad!

    I scaled and gutted a bass and grilled it over coals and it was the best tasting fish ever. I was rather drunk at the time though.

    I don't understand why more people don't eat bass. They're a meaty fish and they cook up great.

      i think it’s because they are caught for fun in local ponds(most times) where they are put there and people have trash and the public pond/lake looks dirty at times. but if it was wild i would totally go for it

      I think a lot of it is because they are believing what they're told or read that only panfish or walleye are what is good to eat. Wrong! That or they're bad cooks and don't know how to properly clean and prepare bass. Largemouth and smallmouth bass are excellent fish to eat...they taste great baked, fried, grilled etc.

    I never could relate to catching any fish just for the sport. I love to eat fish. And I love to eat bass, and I've enjoy them since I was a kid. They're one of my favorite fish to eat. So I appreciate videos like this with tasty recipes. After all it's what people have done with fish for throughout our history of existence - eat them. For those who think that all of a sudden that bass now only exist for them to bury a sharp hook into, pull out of the water, gawk at, and release; or that it's sacrilege keep and eat, so be it, if that's what you like to do...more for me. Just don't criticize those who catch and eat.

    Made a big batch tonight and it's great. My wife makes some great shrimp and grits and the recipe is practically identical. Never thought to do it with fish, but I'm glad to have another way to fix bass now.

    Respect, Sir: There were a lot of things on that plate I do not normally care for, but watching you make it, if I had ordered it in a fancy $100 a plate restaurant, I'm sure I would have eaten every morsel and licked the porcelain clean when no one was looking. You are a legend to the men of cast iron.

      Yes bass are very good and healthy to eat. And need to remember that largemouth & smallmouth are in the sunfish family not even a true bass . So delicious. I always take some home to eat and put a few back works out pretty well.

    This is so damn southern, that’s how I know it’s gonna be good.
    Don’t think I’m being sarcastic. Black or white, southerners just know how to cook like nobody’s business. No white jokes about not putting seasoning when it comes to southern people.

      Funny you would say that. Watching it I was thinking "I don't know where this guy is from but it is not from the South." No one would prepare the fish like that in the South. Not the woods part of the South anyway. Everything is way too "gourmet".

      Too many ingredients for my liking. I'm a dude that is so cut and dry it makes me look stupid at times. If it was a 25 oz. Open range fed Ribeye, just maybe three ingredients is all you need on the best grill/ smoker your money can buy.

    what do you about the parasites in the bass meat, our season opens late here in Ottawa Canada and the bass is full of worms and parasites.

      I have never seen that in any freshwater fish here. Our inshore saltwater fish do get them.

    when I was little my uncle would only fish for cat,bluegill or crappie.when a bass hit,he would say
    we would get in trouble if we kept it.but now he is dead and gone ,so i guess its ok to eat em now.
    he was a great uncle,miss that clown.

    People who don't eat Largies out of "sportsmanship" perplex me about as much as hunters who don't shoot doe. We've got tons of both around here: get some good sporting action, return balance to the ecosystem, and get a fresh meal all at once.

    Hi Backwoods Gourmet: I just want to share that I really enjoy watching your video's and cooking recipes. Thank you so much for doing what you do for the enjoyment of your viewers. This dish is simple but just looked so good. It reminds me of my 103 year old grandmother (still has all her mental acuities-sharp as a tack). For 40 years she lived with my Grandpop in South Carolina and they had a huge veggie garden out back of their house on several acres of land. She used to grow okra and many other veggies and just made the most delicious homemade veggie soup I have ever tasted. Grandpop turned me on to having grits for breakfast with a little butter and honey and also as a side dish for dinner with a hint of cheese. The scallions are a terrific addition to your grits. Yummy!!!

      Sounds like I would have loved to eat a meal at your grandparents house. I had similar experiences with my grandparents and am trying to keep this kind of cooking alive in a McDonald's 21st century world.     I cant say I haven't kept and eaten large mouth bass, but I prefer to catch and release 99% of the time. Crappie is my favorite freshwater fish to eat though.

    I beat an egg and pour it in the okra before I add the cornmeal. it helps it stick to all the sides as well.

    Awesome video. As a new angler, your video was super informative on how to fillet a catch and I love the cooking piece of the video. Looked like an amazing dish.     hey we are in n/w PA and we have bass! would that Seminole swamp seasoning be good on them? I always end-up using smallmouth bass for turtle bait cause they are full of worms!??

      That happened to me once, I caught about 15 bluegill with the intention of eating them, only to find they were full of worms once I started cleaning them. They were trapped in a pool where the creek dried up on both ends. Needless to say I didn’t eat the fish and it was a horrible waste.

    What is that plate you have in your grill to set your charcoal and dutch ovens? Something custom? I am looking for something that I could put either in the grill or on the ground to keep clean up easy.

    I just prepared some bass the same way I do red fish for the first time on the half shell so basically fillet it off of the bone but leave the skin on one side slather with olive oil and season how u like the put meat side down for about 4 mins on the BBQ grill then meat side up for 2 minutes to release it from skin these time may very from fish size and fillet thickness it turned out amazing have been doing redfish for years like this and said why not try bass

    Yeah, the damn "catch and release" has been taken way to far in my opinion. It's beyond ridiculous. Sometimes I see horrible comments when someone "dares" to speak up and tell the world that he or she does catches and cooks. It's almost as if that person committed a bloody murder or something. And some pro fishermen are even enabling that ridiculous C&R trend, sadly enough. There is absolutely nothing wrong with catching and cooking you a nice bass from time to time (or any tasty fish for that matter). Just know where you take them from and what you're taking (keep it within the legal size and limits). I don't advice getting them from ponds though, unless there are too many to keep the pond healthy. Catch them in big lakes, and you'll notice that there is a difference in taste, since there they'll have more of a diversity of food, as well as their prey being healthier. The bass will be nice and fat, and more vivid.

      Nobody thinks there's anything wrong with keeping a fish. As long as you don't fish the pond or lake out. But most people take to many fish out without thinking of the outcome.

      I used to keep every legal fish I caught regardless, now I only keep if I will eat that day, partly not wanting to deal with cleaning, partly conservation

      Agreed. People here (France) get shocked when I tell them that I keep pikes or bass. I rarely release a big fish (unless it's a carp or an endangered species). Cheers

    It's good to see you release the bass into a frying pan. Like a lot of things, the catch and release mantra went too far. Some lakes, it's better to release. Others it's better to keep a few. Every body of water has its own particulars. In many lakes, bass is a sustainable resource. Just know what the deal is in the water you are fishing.

      Ray Scott has said many times. The biggest mistake he ever made was in pushing fisherman to practice catch and release. Everyone releases now and the competition for food is so great that more and more lakes are producing stunted fish.

    I just recently found your channel and I was wondering... What kind of oil do you usually use? Or is it different depending on what you are frying?

      The best oil for frying is peanut oil, but it is expensive so use what you can afford.

      If your deep frying canola is cheap and does not add any oily taste. But for panfry , bacon fat or lard is the best. I tried sunflower but its expensive and breaks down to fast. Can do peanut oil . Ive deep fried fish, pork , beef , and french fries in the same canola and not had any taste transfer.

    2 tips.
    1. Don't leave your shotgun by a screened in area. Perpetrators can easily get to it before you.
    2. If you cut the onion instead of pulling it out with the roots, it'll grow back, giving you a lot more use.

    6:20 I found when you fry any veggies (especially tomatoes or eggplants) if you slice and salt them and leave them out salted for a half hour or 20 minutes they release a lot of moisture and take on flour more. I'll try it with okra but just paused to drop a comment.

    Looks great! As far as all of the comments on keeping larger fish, Your enjoyment from catching a "trophy" fish for a tournament does not supersede my choice to have that "trophy" fish I catch end up at my dinner table. The last place I thought I would read comments from people chastising another individuals personal choice that is both legal and moral is on an outdoor channel. Happy fishing!!

      BTW, A 6 lb bass is NOT even a "trophy" here in Florida. Got hooked behind the tongue and bled out. Fresh water grouper!

    There are small glands on the sides of the fish that need to be removed if you are not a fan of fresh water fish. A friend showed me how to do it...after that my wife loves fresh bass!! She never ate fresh water fish before that because of the taste.
    I live on the shore line of lake Ontario..but lake Erie is only about 40 min away, and they have some of the best small mouth fishing I have ever seen. At the end of Ontario here where the St. Lawrence water way is there are some monster large mouth. No like fla of course, but still good eating fish!

    Trout is a good stocked eating fish all fish can always grow larger catch and release for me more often than not but yes God put them here for us to eat nice video

    My does this sound great, but where I live we don't eat grits. You heard of Maryland crabcakes, well I make my own version and use that great big bass. When I get rushed I simply buy a box of Stove Top and plenty of bass, Taste is great and the grandkids eat it as well.

      I agree. If you want to save the fish from harm, then don't catch them at all. Like releasing before you catch. DON'T BOTHER THEM AT ALL.

      It’s fun to fish bass for game. Some fisherman don’t even like fish they just love the game. I know plenty of bass fisherman though that will eat bass. Me personally I won’t. But i love to eat catfish !

    I'm a huge bass fishermen and I do release mine but I have eaten them and they are actually good. I have no problem with people keeping them but don't keep the big ones 3+lbs

      I only kept the larger one because he was hooked in a bad spot behind the tongue and bled out. The 14-15 inches are best for eating. The big ones are not bad either.

      Actually, the big ones are not the prime spawners. Why do you think that we implement slot limits? The very big and small ones are the best ones to harvest from a sustainability point of view, but the big ones are not the best tasting.

    I would love to eat more bass but they commonly have round worm where I'm at in Florida. I don't know if it's all of Florida but about 2 in 3 I catch have it and usually worms don't veer me away from fish too much but this is one of the few parasites that can actually transfer from fish to humans.

    Great dish and vid. I've always felt that bass tastes swampy (like the smell of the water it lives in) but I think you could use just about any meat in that dish to mask any off tastes and it would be awesome. Nice job

      Our bass do not taste "swampy" This lake is 23K acres of water and very healthy.

      Nice. I've tried bass from east to west coast, and they've never tasted as clean as a crappie or cat to me.. Some people even say bluegills taste better than bass, but I've never tried'em.

    I prefer the spotted bass that we have here in Lewis Smith Lake. They are very mild, and almost sweet.

      We don't have those down here but I have caught plenty back in my tournament tour days. Good fighters and they are always nice and clean.
