    I had not heard of a bouquet garni, until I saw it in a recipe. I thought it was a spice. I actually went to the grocery and ask for it.... No one knew what it was. Then I thought to google it and I have learned so much. I now know how to make a bouquet garni four ways. Thanks you for the video! Very helpful!

    a good way to make a small one is to cut off the top of a teabag, pour out the tea, fill the bag with herbs then fold over the top and secure with a cocktail stick

    When I use the laurel (bay) leaves, I remove the center rib. I have found that this allows the bay to let out more of its flavour.

    Since it is not always that easy to find cheesecloth, I buy a roll of medical gauze (without any medicinal treatment). I buy a roll of about 30 cms wide by 5 or 6 feet long.

    Some people also put chervil, scallion, shallot and even burnet in their bouquets garnis.

    He could have used just a half of that cheese cloth... Wastage of even the slightest thing gets to me.. sorry.
