I made it without the butter. The recipe I followed said to blend the pistachio kernels about 1 cup or 1 1/2 in food processor with the condensed milk. Because of the liquid its soo much easier to break the kernels and everything was blended nicley then folded it in with the whipped cream and add some roughly chopped ones
The condensed milk adds sweetness yes, but moreso, milk solids (Density). Try evaporated milk... you will still want some sweetness so maybe half/half?

@@hanouf679 it’s using a Device to mess with the ingredients to make ice cream supposedly better and if you research it online bc you love food you’ll see there’s lots of debate about the best device to use and they’re expensive and sometimes don’t even save you work. But I’d guess how Italians do it would be right bc they got gelato really right although it’s not super fat which seems counter intuitive. It’s actually very low fat for a rich delicious food. Also if you research Italian ice cream online it’s amazing how stylish they are with it. Does that answer the question?

You probably whipped it too long. Because that’s what you have when you continue to whip heavy cream for too long…turns into butter. Keep it very cold and it’ll take longer to become a butter consistency.
What? 😂 pistachios are the flavor of it and they are very healthy. Milk is also very healthy and an essential part of any ice cream as it prevents it from becoming an ice cube the only unhealthy part in ice cream is added sugar
Guys its more Like a parfait then an ICE cream IT can be quite Good but i recommend filling it in a higher and more narrow Container and then Serve it in slices with some fruit souce

Use whichever you like! Try it multiple ways over time, or in small batches at once to judge for yourself which you prefer.
