In Poland we prepare "smalec", which is basicaly pig fat with fried onion and small pieces of meat. Best thing ever for sandwiches (put some sour cucumber on top).
My family has always saved bacon grease and used it for many things . It started with my Mama teen she would save it and use it for eggs cornbread you name it .
I started to use bacon grease on when you refry beans, eggs, even when you want a nice steak! I also filer the grease to give it a more pure taste. This is GOLD!
In Romania we do the same but with pig grease wich is very very good and put salt some onions besides and , we re done! Great video as always Evan, nice to see somenone of industry try this delicious food.

I believe any departure from seed oils/polyunsaturated fat to animal fats is beneficial. Butter is favored as unlike oil products, it is not a pure fat. Pure fat has no flavor. Butter is a combination of oil, milk solids and water. It's an emulsion, which gives it its ability to thicken sauces/bind things in cooking. The milk solids are what would upset your stomach. Ghee, or clarified butter, being the removal of the milk solids. Classical French cooking typically starts with 'lardons', or minced bacon, in the pan to render the fat out to begin the cooking process. Seed oils have since replaced this...

You know a great substitute for butter on toast, roll, etc. is coconut oil. At room temp its a soft solid and it spreads and melts just like butter. Obviously not the same flavor but still good. Very healthy.

Animal fat is great in rice. For big stovetop batches of rice, first toast the rice in the fat. Butter is fine, it is the way rice-a-roni is done if you ever make that, but bacon grease is better. I make big batches in a wide 4QT pan Toast a pound of rice in 2-3 TBS of bacon grease, add your 4 cups of water, chicken bouillon, a can of rotel (tomatoes & chiles), bring to boil, cover, drop heat to low for 20 mins, let rest 10 mins off heat before removing lid. Perfect mexican rice. If you just browned up a batch of ground beef, scoop out the meat and fire up a batch of rice in the residual fats on your pan.
In Hungary, lard on bread with raw onion slices and some red paprika on top is a common delicacy. :) When there was some meat cooked in that lard, it's the best. :D
Anything is better than highly processed refined oil that looks crystals clear. Not that seed oils themselves are bad. But the seed oils commonly sold aren't even close to the actual oils that come out of the seed. How do I know it? I have relatives who run oil mills that press out oil from peanuts and sell it to companies that process and bottle them. The naturally extracted oil, by cold cold pressing, goes rancid before you know it (in the climate of my native). The processed one however takes weeks before you notice the rancidity.
I get a couple pieces in a large skillet started, when the fat starts to render I put in a couple sausages and crack a couple eggs right into the grease pond. Everything comes out perfect and I didn't even have to use butter or oil.
I'm not super knowledgeable on the subject to be honest. I know that this bacon is technically uncured but that doesn't necessarily mean it's nitrate free...Im pretty sure that the combination of a few of the different natural ingredients used in uncured bacon actually form nitrates. Not to mention, things like beets contain nitrates. If I have a piece of bacon here or there, I'm not too worried about it!

Watching this video after I just took out my cast iron sheet pan with the egg/pancake recipe I got from one of your previous episodes. Slightly augmented it by adding egg white protein to boost protein in each square.
Hey Evan, I know I already posted regarding not being picky about what you post.....but on second thought. Have you tried tinned sardines? I've been on a kick recently and am totally hooked on these little fishy treats. Anyway you can post your opinion on the nutritional value of these things? I know there's a stigma about tinned food, but some of these brands like Bela, Matiz and the gold standard Nuri aren't particularly cheap and IMHO taste way better than the fresh counterparts.
I love tinned fish in general. Some of the brands have oil that's soooo good, I drink the oil and save the fish for later 😂. Curious to see Evan's take as well.

Sodium is more of an issue than fat. According to a few official sites, bacon still has lower sodium than butter per similar weight. I was very surprised about that considering dry cure is salt based.
I knew a man who's family was native American Indian/Appalachian mountains. He & his family put some coffee grounds in bacon grease & put it on biscuits when there was no gravy
All cooking in our house is done with bacon grease, butter and olive oil now. No seed oils and no unsaturated fat. After a year of only allowing saturated fat in our kitchen and our collective heath has greatly improved.

Have you tried goose or duck fat? it has lovely taste. What about ghee (or goat butter or butter from A2 milk )?... maybe if you combine all these delicious fats you can make ultimate delicious fat thing.
Hey Evan real butter has been proven to be very good for you. What we use to think has changed It's rich in nutrients like bone-building calcium and has compounds linked to lower chances of obesity. Butter can also be part of a low-carbohydrate diet, which may help people better maintain their weight or lose weight quicker than they would with a low-fat diet. And the same thing for lard back the old days it was very beneficial Lard is an excellent source of vitamins and essential nutrients. Like many animal products, lard contains high levels of B vitamins and choline. But woodland-raised lard also has incredibly high levels of vitamin D, because the pigs that produced that lard were raised in the sunshine and feasted on forage. Good to know!
Hi Evan - really enjoying your content as I’m sure I will watch more. I learned very quickly that you don’t do dairy and I don’t either for the same reasons. I am curious though when you were bodybuilding, did you ever take whey protein concentrate? Because that’s dairy-based and the times that I have taken WPC my body has always rejected it. When you were bodybuilding, what was your source of protein? (I am going to guess that your body probably didn’t tolerate WPC?)
I would use the Kerri gold butter because it’s pasture raised. Most Bacon fat most likely from a corn fed pig, so has high amount of linoleic acid. Definitely would avoid the bacon fat.
My family has used bacon greese for cooking for years, as long as I can remember. BUT, my wife freaks out when I try to use a drop of it anytime. It's the best to toast bread in the pan you fry the bacon in.
There’s this brand called BaconUp that sells just pure bacon grease. They come in little tubs and go all the way up to 9 pound pails lmao, I’m going to use it to make some THC butter, even use butter stick molds and wrap em in wax paper hahaha call em Max’s Magic Morning Butter ™️

I keep bacon fat to make mayo. Also, try to eat a spoonful of cold bacon fat about 3 days a week to help with digestion. Never spread on bread but will try. Good video. #liquidgold
Has anyone tried bacon grease with balsamic vinegar then with bread instead of olive oil with balsamic vinegar? Curious if it's yumier to taste with the tongue, not prejudice with bacon fat being bad.
As a former CT resident who moved to Texas, I was shocked to find the local grocery store offers bacon grease in a tub…something I never saw at Stop n Shop! Chocolate chip cookies with bacon grease are a delightful treat; it may also be useful as a bronzing oil too

I've just recently started using bacon grease for eggs myself. I haven't wasted my money on butter in about a month or so.
Lard/Pig fat is high heat stable too. My favorite fat for wok cooking and stir frying.
Lard is great for searing steaks, such a good char on the outside.
