My Mom and Grandma vacuum sealed the canning jars by pouring a little bit ( 1 tsp. to a 1 tblsp.) of vodka/gin/rum etc. on top of everything after glasses were filled hot then lit it on fire and quickly closed off the jars. The flames consume the oxygen and vacuum seal everything. If there's a bit of rum etc. left when opening it all then it got stirred into whatever was in there. The little bit of rum was excellent in for example Apricot Marmalade..it's not a lot left anyways but it preserves it perfectly this way. I bet Gin would be great for Ketchup..it's juniper spirit after all.
Just a few days ago I rejected all of the ketchups at the coop, for the reasons you state. This video was well timed for me. Although I don't have the equipment used I can make do with what I have. Thanks.
Thank-you for this delicious-looking low sugar ketchup guide. Fall is not a good time to buy canning supplies, winter is the time to stock up for next year. I'm glad Italy gets to control what food producers produce. But maybe the italians are the ones controlling things, by making prudent purchasing descisions, buying wellness over addictive crap w/unhealthy additives. Italians do live long. The US sugar industry has some sort of a hold on our health these days. They know it's addictive, and they don't care it causes cardiovascular disease, and they lie and tell us that eating fat is the problem, sheesh...
I've been making home made ketchup for a while. This recipe is excellent because it uses apples for sweetness instead of some kind of syrup for sweetness. Personal preference, I throw a stick of cinnamon ni when I cook it. Not traditional but I like it.
This looks so good will give it a try … any idea how long these are shelf stable we live on a hot muggy climate here in Georgia along the coast … thank you for sharing your wonderful recouped and knowledge… stay blessed
I tried to do it once. No one liked it. Hours and hours of cook down. Yielded a couple of quarts. Then no one would eat it, because of Spicing? Never bothered again!
So sorry to hear that. Often we prefer certain store bought foods without realizing that it’s the food chemistry (chemical ingredients) that make our brain pleasure center to like it and want for more. Sad…
I tried it one summer when we were gifted a lot tomatoes. We had a similar experience in terms of the cooking time, yes, there was a masasive reduction in tomatoes, of which you need a ton, but the results were outstanding, even the children preferred it. We just haven’t had the time and tomatoes to try it again given all the other canning we do. Probably best to do with friends.

The tomatoes could be pushed through a strainer to remove seeds and skins.
