In Taiwan, People call it 《蔥油餅》. There are a lot of methods about scallion pancake, it can add egg or sweet filling(I ate peanut flavor and sesame flavor) or meat of stuffing (usually it's pork). It is common tranditional and make easily food, almost see it everywhere, a lot of vendors sale it.
It's basically like a croissant, you layer, oil, roll, layer, oil, roll, layer, oil, roll, then you put it vertical after the final roll and push down on it to create the flake layers. My mother in law is a Chinese chef and I spent 20 years there. Best is when you used infused oils from scallions, spices or actually chillies.
This makes my mouth water. Love love love scallion pancakes but they are hard to get in my small city. I have to go to Cincinnati to get some. Maybe I'll try this...although dough is intimidating to me, always. Loved the video and thanks for sharing!

In contrast, the Korean pajeon puts the green onions in a batter which is then cooked like a pancake. You can add seafood to the Korean one, and that plus the addition of five-spice to the Chinese pancake is the biggest difference imo!
Please fix the recipe in the description. I followed the instructions exactly and ended up with a much too wet dough. Because in the first step it says to add double the necessary amount of water.
We call this "Gözleme" in Turkey, it's very popular here. Mostly spinach is used but similar greens can be used too. We also mix greens with curd cheese.

Indian’s also make this it’s a Partha, or oil roti with green onion. Often times we put potatoes or hot peppers or split peas in the roti.
