That's the difference between stereo vs binaural. Stereo has 2 channels, but you cannot tell the difference between front/back, up/below etc. Binaural can provide this information thanks to the mics being in fake/real ears.

Being able to create a truly binaural sound space like this makes a monumental difference, bravo on this excellent take on an absolute classic video!
