watching this kind of thing makes you feel like an arsehole for ever declaring a movie 'shit'. Obviously, there are so many people involved in making a film - it's easy to write a production off if the script is silly or the acting not oscar-worthy but hey in so many instances the cinematography/costumes/special effects/props guy/credits artist/stunt doubles may have been amazing!
Either clever camera angles (think of looking at a mirror on an angle - you see the rest of the room, not yourself), or, like they did on Mission Impossible 4, they just painted it all out. Methods probably changed from shot to shot within a scene - that way, the audience doesn't "spot" one telltale sign of the trickery.

her names Gazelle and its CGI, green fabric, then they use computers to animate the legs into blades. And its not the most amazing you've ever seen. Superhero films and transformers use them ALL the time.
