    Chef Lulu and Chef Christine from Kenya discussed the preparation and cooking of African tilapia, with a focus on traditional Kenyan cuisine and the importance of handling hot oil. The team also engaged in the making of a ugali using millet flour with guidance from Chef Emily, and discussed the cultural significance of food and the work of Chef Christine's charity organization, Kivulini Jamii Initiative .
    Kivulini Jamii Initiative was started in 2022, with an aim of improving livelihood and eliminating poverty among, children, girls and women in Kisumu County Kenya.
    At Kivulini Jamii we have One meal a Day Program which aims at fighting hunger while improving nutrition of school going children in informal settlements of Obunga and Bandani areas in Kisumu County Kenya. One meal a day seeks to drive drive education, improve nutrition and eliminate poverty.
    We serve one cup of Nutritious Porridge to 50 children 3 days in a week.
    We made ugali with non-corn ingredient; millet flour.
    White cornmeal is the most commonly used grain for ugali. But you can substitute sorghum, millet or coarse cassava flour or even hominy grits.
    Ugali, also known as posho, nsima, and other names, is a type of corn meal made from maize or corn flour in several countries in Africa. It is cooked in boiling water or milk until it reaches a stiff or firm dough-like consistency. In 2017, the dish was added to the UNESCO Representative List of the Intangible Cultural Heritage of Humanity, one of a few foods in the list.

    Fish Ingredients
    1. Whole Tilapia Fish 500 grams
    2. 1 liter vegetable oil
    3. 2 large red onions
    4. 5 Large tomatoes
    5. Assorted bell pepper
    6. 50 gram fish masala
    7 ginger & garlic
    8. salt
    10. lemon
    11. Fresh Coriander
    12. Tomato paste
