    BLACK EYE PEAS
1 (16oz) Pack of raw Black Eye Peas
    1 Half Stick of Butter
    1 Onion
    1 Green Bell Pepper
    2 Sticks of Celery
    3 Cloves of Garlic
1 lb of Smoked Pork Tasso
1 32oz Container of Chicken Broth
2 Cups of Water (from boiled beans)
    1 Tablespoon of Cajun Seasoning
    1/2 Teaspoon of Garlic Salt
    1/2 Teaspoon of Pepper
    1 Bay Leaf
Start out by heating a pot over Medium Low heat. Also, at this time, get a separate pot of water boiling.
Wash the Black Eyed Peas in a strainer and set aside.
Chop the onion, bell pepper, celery, and garlic.
    Cut the tasso into cubes.
Melt the butter in the heated pot.
Add the smoked tasso, and let sear for about 5 minuets.
Remove tasso into a separate bowl.
Next drop in the onion, bell pepper, celery, and garlic. Sauté for 25-30 minuets.
Meanwhile, your water should have begun boiling. Add the peas to the water, and boil for 10 minuets uncovered.
Strain the peas over a pot, reserving the water. Let sit until you’re done sautéing your vegetables.
Add the chicken broth, tasso, and 2 Cups of the reserved water to the pot of sautéed vegetables.
Add the Cajun Seasoning, Garlic Salt, and Pepper.
Blend well, and bring to a boil.
When you’ve brought the dish to a boil, cover, and lower to a simmering heat.
Keep covered and cook for 1 & 1/2 to 2 hours, depending on how fast your simmering heat cooks.
With about 40 minuets left, begin to cook some rice.
After two hours, stir to desired consistency.
    Enjoy!

If you are wondering “Should I make these peas🧐” The answer is YES!!!
I hate black eyed peas but made them just for good luck😉 2019 was ROUGH🤒🤕🤮😵
Since my husband eats all kinds of beans or peas I was only cooking for him. We don’t eat pork so I used Hillshire Farm Smoked Beef Sausage and cut them into tiny pieces. I added a 1/4 teaspoon of baking soda to the pot since a nurse told me it stops the gassy bean farts🤭
These peas were smooth, creamy, flavorful with no overpowering pea taste.
    Total touchdown for these BEP😘😋
