    INGREDIENTS
    -ghee 4-5 tbsp
    -cardamoms (3)
    -bay leaves (3)
    cumin seeds 1 tsp
    -ginger (15g)
    -2 medium onions
    3 cups basmati rice washed and soaked for 20-30mins
    -1 tbsp cumin powder
    -vegetable of choice
    -green chilli’s
    -hot water (approx 4.5 cups or as needed)
    Method
    1) Wash the rice at least 3 times until water runs clear. Soak them in enough water for 20- 30 minutes. Drain the rice.
    2) Heat Ghee in a medium sized pot. Add Bayleaf, cardamoms, bayleaves, cumin seeds and saute for 2 minutes, until fragrant.
    3)Add ginger and sliced white onions, and cook them in low flame until soft.
    4)Add cumin powder, fry for 5 mins. Add frozen vegetable of your choice. (I chose garden peas, preen beans and carrots). Stir for 2-3 mins.
    5) Add the drained rice and saute them for 2 minutes until rice is toasty and has coated with onions and spices.
    6) Add boiling water to the rice. Add green chillis (optional). Check salt now adjust if necessary.
    7) Cook rice on medium heat until water has absorbed.
    8)Cover with a lid and reduce the heat to the low setting. Cook for 8- 10 minutes or until rice is nice and fluffy.
    Enjoy with a protein of your choice!
