Best Bolón Recipe - Green Plantain Breakfast in Ecuador

  • One of the best breakfast dishes in Ecuador is a Bolón de Verde recipe made with unripe green plantains and cheese. I prefer bolon mixto, which includes a bit of pork. In Ecuador, traditional bolon mixto is made with chicharrón, but in my recipe I use smoked rib meat. Bolon is a hearty breakfast comfort food, and along with Ecuadorian tigrillo, it's a great way to cook green plantains.

    The green plantains are very popular, and this recipe adds much more excitement to it thanks to the fun and memorable ball shape!       we've been eating a ridiculous amount of plantain, which is really the tater of Ecuador, although there are actual taters, too--there is no shortage of French Fries in Cuenca--but I've been sticking with the bolones and tigrillos and patacones. Hope you're having a great week as well!

      we always find tasty plantain dishes when we travel to Latin American countries, but so far Ecuador has taken the crown for most ways I've encountered to enjoy plantains...I've never been to Costa Rica...enjoy your trip!

      no plantains where you live? If there is an Asian, Latin, or even Indian market in your area, you might take a look there...like Dragon fruit, I see plantains around a lot more often than I used to see them.

      the ceviche here in Ecuador is great...I love it...my biggest complaint with the ceviche here is that the servings are too big! I love the first half of the ceviche a lot more than the second half

      I've been enjoying another plantain dish here called Patacones, which is very much like tostones, except the plantain is used almost like sandwich bread...definitely not the healthiest dish, but I'm still eating too many of them

      I've had plantains all kinds of ways, but I never saw a bolon until we got to Ecuador--it's fun--and tasty. have you had patacones?

      green plantain is a lot like potato, so it can handle a lot of added flavor...I think some of the bolones I eat out in restaurants are twice-fried like tostones, but I cook my plantains in water initially, so adding a little extra flavor can only help

      often bolon is served with a side of seco de carne which is kinda like a thin beef stew and the bolon will be resting in the juices, or I've had it served with a creamy aji sauce...I like it with just a runny yolk

      in Cuenca, it's cool...usually between 50F and 70F...I never leave the house without a jacket...and it's cloudy a lot with rain most days, usually not too much rain, but we get sprinkled on quite a bit, and I'm glad to have a hat...I wouldn't mind if it was warmer...I usually wear two shirts in the house, and even a hat sometimes 'cause there's no heat.

      I got invited to a guinea pig roast--in Ecuador the dish is called "cuy"--but I didn't go. I'm sorta kicking myself for not going, but I'm also kind of happy that I can say sometimes "no" to food.
