    I just finished canning the half recipe and somehow ended up with a total of 10 pints of deliciousness. The flavor of this beef stew is really, really good, and searing the meat produced a fond that added to the richness of the broth. This recipe is both economical and better tasting than anything found on a grocery store shelf.

    I 100% love this beef stew. I followed your adjustments and it turned out wonder full. I did the full 7 quart recipie and ended up with ten quarts some how but the extra run of 3 quarts is perfect. Didn't mind the extra time for 3 extra meals for my wife and I.

    When reheating - the corn starch is great to thicken the liquid, and I also add a splash of red wine for more flavor (I let it all boil for about 3 mins before adding the beef and veggies) - it's yummy.

    I bought a smaller pack of beef stew meat on sale, so I’m so happy to find this video (with the exact recipe I’m going to use) cut in half! I’m a new subscriber- thank you for being so clear with the process for us “nervous newbies”. I’m going to make the Split Pea soup first, then this Beef Stew.

    It canned up so pretty! I like the mixingv up of the soup better than filling jars in a cold pack method. The ingredients tend to mix better instead of being layered

    Happy to see you back. Can you safely eliminate the celery? Can you safely add tomato paste? I don’t use celery in my stew and I usually add about a 1 tbsp of tomato paste.
    This would be awesome to have in the pantry.

    You can do what I do, brown the meat in your oven instead of frying it.
    FYI... store bought stew meat doesn't necessarily mean it comes from chuck or one particular cut of meat, most of the time it's the leftover scraps from cutting all the meat types.
    If you want a great stew meat either get directly from a butcher or buy whatever cut of meat you like and cut into chunks yourself

    I have a question??? Since the chicken is cooked in batches---- The 1Tablespoon of vegetable oil it calls for, is that (per batch) or for cooking the whole amount of chicken. I know I have been asking a bunch of questions, but I want to make sure I do this right. I have been so scared of canning, but since I found your channel, and you make a point to say you use tested, safe recipes only, I am really wanting to try some of the recipes you have shown us. Thanks for all you d!!! Hope I don't get on your nerves too much

    Almost running out of water in your canner can largely be attributed to having the water boiling for too long while you're filling jars and loading it.
    If you think about it, you have a large pot that's boiling and the water is evaporating the whole time.
    I've found if you allow the water to heat but not boil you'll have less issues or add an additional cup or two of boiling water before you close the canner you'll have enough water for the whole process

      I don’t yet but I have beef in red wine on my canning list. Sirloin would be a good choice for that. It’s in the Ball Blue Book if you have it. I’ll be doing the video soon but you may need it sooner than I can get to it.

      You should be able to use any lid for steam canning that your use for water bath canning

      I tried the tattler lids during my steam canning, only 1 sealed the other 3 failed so in the freezer they went. I’ll only use regular lids during my steam canning projects. Thought you’d like to know.

    New canner here.... I have the AA canner. I've used my canner for a few weeks now. My weight doesn't jiggle when it gets up to pressure. Is this a problem? I can keep the 11 pounds of pressure, and my canner hisses and steams, but the weight doesn't jiggle.

      The AA canner is considered a weighted gauge canner and your weight should rock. Are you canning at the correct psi for your altitude? You should also have the gauge checked or replaced of your think it isn’t working properly but you should always go by the jiggling regardless what the gauge reads. Please read through your manual as it explains this 😊

    Sorry to hear you’ve been ill. May I ask, was your canning pantry a go to for quick easy food when juggling illness/mothering recovery? And if so, what items were favorites?
    Thank you for sharing this beef stew recipe. It’s super helpful to learn how canning pros safely tweak tested recipes to account for taste preferences. Do you think adding garlic powder to taste is better after canning? Like adding a suggestion of garlic power at the same time as mixing in thickening agent when reheating?

      Yes my pantry was filled with healthy options that helped me… canned fruit, chicken stock, and Chicken Stew/pot pie filling were my go to’s. I added noodles to the Chicken Stew and had nutritious chicken noodle soup in just a few minutes.
      As far as adding garlic powder both options are delicious….

I’ve got various stocks and broths actual canned but not chicken stew. Best I get my skates on. Think I’ll do chicken and sweet corn. And hope to be able to taste it… 😬 but at least I’ll know it’s nutritious! Great content, Carol. And thank you again for your helpful reply.

    Good morning. I made the recipe and used quart jars. I canned outside and my gas ran out at exactly 15 minutes left to can. I'm guessing. I'll have to eat this this week or freeze? My meat was already cooked. Any suggestions. This is my 4th time to try canning. So newbie here .

    This looks great. As a newbie..I've had a question on Canning stew the "layered" way we see on many YT channels.
    Layering and Hot pack with cold veggie question 🤔🤔
    What you're doing here seems to be fully approved method.
    The veggies are are essentially warmed up this way...not pre cooked.
    I have some beef in the fridge waiting...will go for it 😊💕

    I called the 800 number for all American canner. The tech said no need to steam for 10 minutes...weight on after first jiggle. Said they needed to update instructions.

    Why would you add everything into the beef when you can brown the beef, put in jars and add the veggies? Seems like veggies this way will get them mushy. Ew.
