If possible can you post the video that Mr. Fender Maker making a side fender. There was a special way he started the first two rounds of knots the made the fender not so pointy at the bottom. Thanks so much.
In case the question is still current - my best guess is that it is a packer’s knot, tightened with the aid of a marlingspike hitch, and locked with a half hitch. All should be searchable on Wikipedia, or the web in general, if more detail would help.
