Thank you! This is a definite keeper here. You can coat slices for parmigiana, flash freeze the slices, and then keep the slices in a large freezer bag for later use, too, if that's something you like. ☺️

This is my 1st time growing eggplants & I had no idea what to do with them. After seeing your video I felt inspired & tried your recipe. Albeit I subbed the red wine vinegar with apple cider vinegar, and subbed the capers with green peppercorns without any added black pepper & it turned out amazing! I am truly happy with my results. Ty so much for sharing!
I think that leaving your peppers whole in the oven would make peeling them easier. Especially if you put them in a plastic bag after they come out of the oven and let thdm swet for 5-10 minutes

My Marine hubby taught me to put a slice of bread hanging out of your mouth while cutting onions...and you wont cry..lol...it works..I buy and chop onions in bulk for my freezer n I cant live without the bread...lol
You are very welcome! I am not sure if it is or not. You could use a test to check the acidity to be sure. I did do a quick Google search, and another site had a recipe that was water bathed. I wish I could be of greater help with that answer. 💜

I found it so odd that peppers and olives are the dominant flavors in this. I would never know there were eggplants in this if I had not made it myself. I can fully respect someone not liking eggplants, though, and not having a need to preserve them. 🥰💜

That’s what I do too.
Blister them, seal, cool and peel.

I don't have the directions for doing it in a steam canner, but I imagine it would work just fine if done properly.

I ALWAYS hated eggplant, it depends upon the size and how it's prepared. Don't get those 2 footers, they're bitter. Former eggplant hater her.
