Hi my dear, in the beginning I wasted cooking gas, electricity and cleaning products by making preserves in glass jars in small quantities, that is, I wasted time and money; and now I set aside a whole day to cook the preserves all at once and I think they are worth it, we have ready-made food available in the cupboard 🤔😝👌🇧🇷
Thanks for interesting recipes and ways to keep tomatoes safe before canning. I have couple suggestions. Music is nice, but when you are talking, it was difficult to follow and understand you. Then, I wish you place your recipes/ingredients below this video. When you add salt in jars, may be better to add salt in the big bowl before placing in jars, since salt is optional and very small amount it will help to make more juice from diced tomatoes. Did you try to use pressure canner? This video is 2 years old - how was yours caponata? 🙂
I wish I had this eggplant abundance! My plants have yet to set fruits. Hope it happens soon! I also hope to get more tomatoes because I would use this recipe for canning.
Hiya!!! I’m a by-the-rules canner and I think you might be processing too long. Crushed tomatoes, in own juice, is 45 minutes for quarts! It’s the tomato halves or whole that’s 85 minutes. I know your tomatoes are diced and then somewhat mashed down with your wood tool so they don’t have the same density as the halves/whole ones. Huge time saver!!!
What variety are the slicers? They look beautiful. ☺️I’m looking into trying hybrid slicers (Carmello for one) for reliable production as some of my heirloom tomatoes have been too fussy to get much production in my heat here in the south.
Most are probably BHN 1021 (from Johnny's) - I love them! They do really well in hot and humid weather, and I agree about most heirloom varieties not performing well in the south.
Your eggplants don’t seem to have tiny super sharp thorns on the stems or around the calyx. What is the variety name please? I’m growing millionaire (hybrid), pingtung and five fingers, all have prickly thorns. Thanks!
I wish I could say, but the packet wasn't in English so I don't know the variety name! I know what you mean about the thorns though - the ones I've grow in the past have those, and they're awful!

Those are Japanese eggplant. We grow them. They are the Best
