How to make wagashi (Ghanaian/African cheese) easy to make from scratch.

  • Wagashie is popular amongst the fulani's as it is made out of cow's milk and they are known for cattle farming. I call it the Ghanaian cheese or even the African cheese as it can found in other parts of Africa. We use it in stews, soups, sauces and can also be eaten on its own deep fried with suya spice or any dip of your choice.
    INGREDIENTS
    4 litters of fresh full fat milk
    1 cup of white vinegar( substitute vinegar for lemon juice)
    salt to taste

      You can dry it as well, but it's a long process with that. So the quick and easy way is to fry it. The fried one can be eaten as it is, whiles the dried one is usually used in soups and sources.

    What temperature do I heat the oil to? Last time I did this, I heated the oil to 350 degrees Fahrenheit. The cheese fell apart :(.

      About 250 , and maybe your cheese was not firm enough, make sure you drain the water properly before frying

      Skimmed milk doesn't have fat, the milk fat and solid is what makes the wagashi which skimmed milk cannot give you. So full fat milk is the best.

    If you’re abroad like in Europe, make sure your milk is not pasteurised or it won’t curdle

      I find that very hard to believe. Pasteurising is raising the temperatire of milk and then quickly cooling it to just above freezing. Gets rid of the buggs. Millions of native in 3rd world countries all over the world use similar proceesing methods to create cream cheese, then modify it to sell as mature cheese, a bit like icecream for them. Been around a long time????

      Wagashi is usually made out of fresh milk straight from the cow and since the process involves boiling (pasteurization) fresh full fat milk is the best however, if you don't have that, you can used the pasteurized milk

      I usually just wrap and freeze it for about 8hours flight if I want it fresh however, in the villages they dry it after steaming for days until there is no more moisture but this changes the taste to another different level. I love it.😋😋😋

      It depends of which cheese you are talking about. But I believe is the texture, which makes it easy for you to deep fry the wagashi without melting.
