It did help!!! Thank you so much for your advice. I was so frustrated as it seemed so easy. I did temper the chocolate by melting it up to 45 C and adding the remaining finely chopped part of chocolate (approx,30 % of the whole amount). But my chocolate was not so nicely liquid when melted although it had this pretty shine (on the parts that came out of the mould the 1st time) so I suppose it was tempered correctly. I am happy now but still wondering what I did wrong. Thank you again for answering and helping out. Have a nice day!!

Hi Elizabeth, there is no need for any type of "lubricant" to release the chocolate. If you don't use tempered chocolate, you must chill the mold and chocolate, what this does is contract the chocolate, and it will almost release itself automatically. IF you have problems with chilling in the fridge, 15 minutes in the freezer will do it. Bring the mold out, and tap, the chocolates will fall out. I have maybe a good dozen videos on my channel here where I show this happening. I hope this helps ! Thanks so much for watching ! 😊

Awesome video. Thanks for posting. I was recently at the mall and found a hollow chocolate labeled as a "smash cake" it was a large cupcake with chocolate covered pretzels inside that you hit with a tiny mallet to open. I thought it was really cool and would be a great gift for a family that I am close with until I saw the price tag. $50! for a 4 inch hollow chocolate, so I thought to myself "I can probably make that for $5! To simplify it I thought I might do a 4" ornament because its simple and made for smashing, but then I saw this and immediately thought snowman. Each section can be filled with something different and I can include a tiny bat to hit it with. Glad you posted this.

I have a question, what do you use to clean your brush? I made chocolate balls once with a silicon mold and brush but it’s so hard to get the chocolate off
Hi Ingrid, hot soapy water. Chocolate melts and falls off the brush in seconds. You can do it by hand or in the dishwasher. I like ti take my brushes, add soap to the end of the brush ( bristles area ) and then gently massage the soap in well, then rinse under the hot water coming from the tap.

Hi Nobody Slim, no, no spraying is needed. Do *NOT* spray anything on your mold. This will ruin the chocolate. If you didn't use tempered chocolate, simply place the chocolate mold into the fridge or freezer for 10 minutes and the chocolate spheres will just pop out very easily.

absolutely yes. Fill one of the halves, then melt the edge on the other half. This way, if you have many you wish to do there is no rush to seal them. Fill all your halves, then seal them one at a time. Works well, and very time efficient.

Yes you can, since your pan is so big, you will have to make the chocolate very thick so it doesn't break when you try to remove it. Remember to put the pan in the freezer for 10 minutes so it removes from the pan easily. i was thinking of doing this with cheesecake but the thing is with my cheesecake recepite i put it in the oven for like an hour and then chill it texture will be quite smooth would it be wise to use a piping bag to put it in the balls or just find a cheesecake recepite that has different texture?

Hi Steve, Semi sphere chocolate mold. I did a fast search on Amazon and came up with dozens of them. In hard plastic ( polycarbonate ) and silicone. Take your time and you'll find what you need. Very nice video. As I am Brazilian and living here in Texas would you be so kind to explain me which kind of chocolate is considered pure and needs to be tempered and the ones which do not need thanks.
Good quality chocolate - look for brand names like Callebaut and Valrhona. These are really the 2 chocolates that professional use. You can also get good quality chocolate without going with those large name. You want to make sure it has no vegetable oil in it. If you really want great info, stop by a chocolatier in Texas and chat with the person there, they will, I'm sure help you out and start you off in a good direction. In the United States you have many great avenues available to you go get a good chocolate like Callebaut and Valrhona though. Keep away from "candy" type chocolate called "candy melts" MANY people think this is chocolate and it is not. It is candy. It may look like chocolate but it is not. If you melt it, and it become hard after you shape it then you know it's not real chocolate. If you are familiar with candy melts, you can melt the little chips in a bowl, and drop some of it onto a silicone mat, and it will harden up and have a snap.... this is not true with real chocolate. You must temper that chocolate to get that snap back. Best bet - do some talking with a local chocolatier, they are very helpful and will help you out quite a bit.
Hello Nilassari 🙂 You want to store your chocolate in a cool place. Do NOT store chocolate in your refrigerator. If you do this, your chocolate can last like this for a very long time. I could for example make these chocolate spheres and put them into a little box and store them and a year later come back and they would still be perfect. I hope this helps ! Hi bre, yes you could do this, if you were using a smaller sphere. You can add something like Bailey's Irish cream, or something like that. It will be 100% OK. These spheres are very large. P.S. - You can use this trick - to add something like a nice Irish cream, you can create the sphere first, then use a little needle ( syringe ) to create a small hole and squeeze the Irish cream into the closed sphere. Once this is done, you can apply a tiny drop of chocolate where you made the hole and this stops the Irish cream from coming out if the sphere is rotated. You don't have to spray the tray or bowl you're using to get the chocolate semi circle out easily? The one i plan to make will be quite large so it won't be as easy as sliding it out with a finger but will it still not require any sprays to get out?
Hi Caitlynn, never spray your moulds with anything. No oil, or something like that. When you use tempered chocolate ( watch my videos on how to temper chocolate if you wish ) when the chocolate cools, it contacts and the chocolate just slides out. IF it does not, then you must put the chocolate mould into the fridge or even freezer to harden the chocolate, then it will come out. It also depends on what type of mould you'll be using. Your question tells me you haven't played around with chocolate too much, so I do encourage you to watch a few of my videos, where I do into a lot more detail which can help you when you try it yourself.

Hi again Caitlynn, glad to be of help. if you melt your chocolate and don't temper it, you will need to chill it in the fridge, or freezer for 5 minutes, and it will pop out of your mold.... the problem though, when you touch the chocolate it will melt upon contact... but... if you are just starting out, have fun with the molds, and the chocolate, then work on tempering. I do have a few videos showing you how to do it, it's a long process though. ( it's not a 5 minute thing ) That said, have fun, and if you wish to start out with something that doesn't require tempering you can use something called candy melts... many mistakenly call them chocolate, but they contain zero chocolate... they are candy - but you can have lots of fun with molds, and - no tempering required. There is nothing saying you can't make some fun stuff using candy melts and molds. Having fun and spending time with somebody in the kitchen is what is important. Hi Lynn, If you are making these and want the best shine, take a soft cloth and wipe the inside of the mold with a soft cloth. This will ensure the chocolate have a really good shine. Also, your chocolate must be really well tempered. If you touch the chocolate balls with your hands this will happen ( the chocolate can dull ) What many chocolate shops will do, is spray a cocoa butter over the spheres that can give the spheres a texture, and hide any defects on the sphere itself. Funny thing, if I am NOT filming, and just under no pressure, I can make 6 perfect spheres ( 3 perfect complete spheres ) without a blemish on them. When filming, you're always trying to do your best, and of course things aren't always perfect. Take your time, and use gloves, don't touch the chocolate at-all, shine your mold, and you will have success. I hope this helps and thanks for watching Lynn.

Hi there, I purchased mine online. You can find many great chocolate moulds on Amazon, and other good baking places online stores. A mould like this is about $40. You can find silicone models that are much less costly. ( this is a professional mould )

Hello, I did not use any additional cocoa butter. I used high quality Belgian chocolate ( Callebaut brand ) I did not use chocolate chips in this recipe.
Hi there, I often use a food grade pastry brush, but you could also use a silicone brush, or use a brand new paint brush. These brushes are sold at all grocery stores, craft stores etc. They are easy to find. Also of course, Amazon is too easy to find things.
I ordered these at a local chocolate supply store. I did it all online. Now, you can find moulds like this on Amazon too. If you live in a large city, a supply store that sells chocolate moulds will be easy to find.

Hi Karen, no you don't. You can keep chocolate in-temper all day long as long as you occasionally give it heat to keep it in the correct temp range. Please note that when you do your first coat, you can pop the mould into the fridge or freezer for just 2 minutes and the chocolate will be hard ( in freezer ) and you can continue on to the next step. Not sure how others do it, but if it's not thick enough to turn over without losing the innards, then maybe the hot pan can be turned over onto the half orb. Just be careful not to burn yourself!

Hi Bali, chocolate should *never* be stored in the fridge or freezer. Notice the term "stored" this means for an extended period of time. To quickly chill your chocolate if you have not tempered it, and want it to release from a mould, you can indeed "chill" the chocolate for a very short period of time with no ill-effects. You can find them at all chocolate stores, online stores, Amazon etc. They are a very popular mold and come in many different sizes and materials from professional polycarbonate to silicone. yes any chocolate will work, if the chocolate melts easily it will work. If you don't temper your chocolate, you will need to keep it in the fridge for 5 minutes before you eat it so it stays nice and firm, it will melt in your hand, but that's ok too :-)

I have a question, what do you use to clean your brush? I made chocolate balls once with a silicon mold and brush but it’s so hard to get the chocolate off
Hi Ingrid, hot soapy water. Chocolate melts and falls off the brush in seconds. You can do it by hand or in the dishwasher. I like ti take my brushes, add soap to the end of the brush ( bristles area ) and then gently massage the soap in well, then rinse under the hot water coming from the tap.

Hi Nobody Slim, no, no spraying is needed. Do *NOT* spray anything on your mold. This will ruin the chocolate. If you didn't use tempered chocolate, simply place the chocolate mold into the fridge or freezer for 10 minutes and the chocolate spheres will just pop out very easily.

If I want to put a more elaborate filling inside I could seal them by melting the edge on one of the halves rather than both?
absolutely yes. Fill one of the halves, then melt the edge on the other half. This way, if you have many you wish to do there is no rush to seal them. Fill all your halves, then seal them one at a time. Works well, and very time efficient.

Yes you can, since your pan is so big, you will have to make the chocolate very thick so it doesn't break when you try to remove it. Remember to put the pan in the freezer for 10 minutes so it removes from the pan easily. i was thinking of doing this with cheesecake but the thing is with my cheesecake recepite i put it in the oven for like an hour and then chill it texture will be quite smooth would it be wise to use a piping bag to put it in the balls or just find a cheesecake recepite that has different texture?

Very nice video. As I am Brazilian and living here in Texas would you be so kind to explain me which kind of chocolate is considered pure and needs to be tempered and the ones which do not need thanks.
Good quality chocolate - look for brand names like Callebaut and Valrhona. These are really the 2 chocolates that professional use. You can also get good quality chocolate without going with those large name. You want to make sure it has no vegetable oil in it. If you really want great info, stop by a chocolatier in Texas and chat with the person there, they will, I'm sure help you out and start you off in a good direction. In the United States you have many great avenues available to you go get a good chocolate like Callebaut and Valrhona though. Keep away from "candy" type chocolate called "candy melts" MANY people think this is chocolate and it is not. It is candy. It may look like chocolate but it is not. If you melt it, and it become hard after you shape it then you know it's not real chocolate. If you are familiar with candy melts, you can melt the little chips in a bowl, and drop some of it onto a silicone mat, and it will harden up and have a snap.... this is not true with real chocolate. You must temper that chocolate to get that snap back. Best bet - do some talking with a local chocolatier, they are very helpful and will help you out quite a bit.

Hello Nilassari 🙂 You want to store your chocolate in a cool place. Do NOT store chocolate in your refrigerator. If you do this, your chocolate can last like this for a very long time. I could for example make these chocolate spheres and put them into a little box and store them and a year later come back and they would still be perfect. I hope this helps ! Hi bre, yes you could do this, if you were using a smaller sphere. You can add something like Bailey's Irish cream, or something like that. It will be 100% OK. These spheres are very large. P.S. - You can use this trick - to add something like a nice Irish cream, you can create the sphere first, then use a little needle ( syringe ) to create a small hole and squeeze the Irish cream into the closed sphere. Once this is done, you can apply a tiny drop of chocolate where you made the hole and this stops the Irish cream from coming out if the sphere is rotated. You don't have to spray the tray or bowl you're using to get the chocolate semi circle out easily? The one i plan to make will be quite large so it won't be as easy as sliding it out with a finger but will it still not require any sprays to get out?
Hi Caitlynn, never spray your moulds with anything. No oil, or something like that. When you use tempered chocolate ( watch my videos on how to temper chocolate if you wish ) when the chocolate cools, it contacts and the chocolate just slides out. IF it does not, then you must put the chocolate mould into the fridge or even freezer to harden the chocolate, then it will come out. It also depends on what type of mould you'll be using. Your question tells me you haven't played around with chocolate too much, so I do encourage you to watch a few of my videos, where I do into a lot more detail which can help you when you try it yourself.

Hi again Caitlynn, glad to be of help. if you melt your chocolate and don't temper it, you will need to chill it in the fridge, or freezer for 5 minutes, and it will pop out of your mold.... the problem though, when you touch the chocolate it will melt upon contact... but... if you are just starting out, have fun with the molds, and the chocolate, then work on tempering. I do have a few videos showing you how to do it, it's a long process though. ( it's not a 5 minute thing ) That said, have fun, and if you wish to start out with something that doesn't require tempering you can use something called candy melts... many mistakenly call them chocolate, but they contain zero chocolate... they are candy - but you can have lots of fun with molds, and - no tempering required. There is nothing saying you can't make some fun stuff using candy melts and molds. Having fun and spending time with somebody in the kitchen is what is important. Hi Lynn, If you are making these and want the best shine, take a soft cloth and wipe the inside of the mold with a soft cloth. This will ensure the chocolate have a really good shine. Also, your chocolate must be really well tempered. If you touch the chocolate balls with your hands this will happen ( the chocolate can dull ) What many chocolate shops will do, is spray a cocoa butter over the spheres that can give the spheres a texture, and hide any defects on the sphere itself. Funny thing, if I am NOT filming, and just under no pressure, I can make 6 perfect spheres ( 3 perfect complete spheres ) without a blemish on them. When filming, you're always trying to do your best, and of course things aren't always perfect. Take your time, and use gloves, don't touch the chocolate at-all, shine your mold, and you will have success. I hope this helps and thanks for watching Lynn.

Hi there, I purchased mine online. You can find many great chocolate moulds on Amazon, and other good baking places online stores. A mould like this is about $40. You can find silicone models that are much less costly. ( this is a professional mould )

Hello, I did not use any additional cocoa butter. I used high quality Belgian chocolate ( Callebaut brand ) I did not use chocolate chips in this recipe.
What type of brush should I use?
Hi there, I often use a food grade pastry brush, but you could also use a silicone brush, or use a brand new paint brush. These brushes are sold at all grocery stores, craft stores etc. They are easy to find. Also of course, Amazon is too easy to find things.

I ordered these at a local chocolate supply store. I did it all online. Now, you can find moulds like this on Amazon too. If you live in a large city, a supply store that sells chocolate moulds will be easy to find.

Hi Karen, no you don't. You can keep chocolate in-temper all day long as long as you occasionally give it heat to keep it in the correct temp range. Please note that when you do your first coat, you can pop the mould into the fridge or freezer for just 2 minutes and the chocolate will be hard ( in freezer ) and you can continue on to the next step. Hi Janine, it will work. I've done it. If you are not using tempered chocolate, make sure you freeze the "mold" for a good 10 minutes before you try to remove it, - it should just pop right out. Gently use your fingers to slide it out, or gently tap on your table to get the chocolate out. Not sure how others do it, but if it's not thick enough to turn over without losing the innards, then maybe the hot pan can be turned over onto the half orb. Just be careful not to burn yourself!

So putting chocolate in the refrigerator or freezer doesn’t bloom the chocolate?
Hi Bali, chocolate should *never* be stored in the fridge or freezer. Notice the term "stored" this means for an extended period of time. To quickly chill your chocolate if you have not tempered it, and want it to release from a mould, you can indeed "chill" the chocolate for a very short period of time with no ill-effects. You can find them at all chocolate stores, online stores, Amazon etc. They are a very popular mold and come in many different sizes and materials from professional polycarbonate to silicone. yes any chocolate will work, if the chocolate melts easily it will work. If you don't temper your chocolate, you will need to keep it in the fridge for 5 minutes before you eat it so it stays nice and firm, it will melt in your hand, but that's ok too :-)
