I’ve tried both ways but I find this way (not to remove the skin before boiling) much better. Consistency of potatoes is much better. Potatoes are not sticky this way. It is easier to squeeze air out of the potatoes. Thank you for your question. I hope I was helpful 😊✌️

What is all type flour?
All kind od soft flour. I’m using soft spelt flour or soft wheat flour. I used the spelt flour in this recipe.
