What amazes me is how they prepare their food with care and delicacy. They make use of every consumable part of the fish as possible. Even with simple garnishes, they make the dishes so mesmerizing.
This is beyond professional the way they do it. Those knives are incredibly sharp, the cuts are perfect, they put a heck of a lot of care into the process.
As a poor man, I appreciate this video. Whenever I get hungry, this video always seems to makes the hunger go away, so I save a lot of money on groceries.

I can attest that this is a good chef that knows what he's doing. My father in law is a sushi chef and prepares his fish the same way. It is an art and these guys know what they are doing. I use the same knives and have the same cutting boards, etc. But he's more skilled than I am. I was drooling looking at the Kama. I want to eat that so badly.
The surgical skill of these chefs is simply amazing. I wished they also showed the knifes being sharpened allowing this beautiful culinary art to make me want SUSHI during his video. I almost bite my phone 😉

Anyone skinning this fish in America would have plugged in a 10 @amp DeWalt disc sander (bought from Japan), slapped on a 40 grit disc and sanded the skin and scales off - then spent twice as much time cleaning the kitchen up. I will admit though, they got the American construction worker attitude down pat - one guy works while four others supervise. Japanese placement, prep and presentation of dishes is a thing of beauty. Cool vid.
Yellowjack is not expensive. You can have a frozen whole hamachi (50-60 cm amberjack), perfect for grilling and braising, for as little as $4 where I live. Expensive is sashimi-grade yellowjack. ;)
