    You know what I love, Shorn is willing to learn, she’ll get it right in the end. Practice makes perfect, I am British born of both Jamaican parents. I have been told that when I cook rice and peas you don’t need meat.
    Jamaicans have asked me how I’m English born and cook rice and peas much more tasty than some born Jamaicans. When your Jamaican parents have their foreign born children in that kitchen from 8 yr of age you must cook it good.
    Shorn is going to be able to cook Jamaican food brilliantly in time to come, trust me ❤️

    That bag of red dry kidney beans is the best thing to use it only look like that but when u cook it the best for rice and peas no can beans

    Oxtail must be seasoned and allow it to marinate for an hour or two or even overnight and can be cooked Ina pressure cooker or regular pot for about 2 hours.

    In Jamaica we cook our "peas" which yall call beans until it's soft,while cooking the peas you're gonna notice the colour changes...cook until soft, then you're gonna add your milk or powder whichever you choose, cook it properly though then you're gonna season the pot with the necessary ingredients. Add your rice and wait until it's cook...you don't want alot of water to cook the beans and it's still can't be too less

    Hi Shorn. Rice is loaded with starch so you should wash it until the water is clear to get rid of excessive starch. Some people wash it twice I grew up know it supposed to be at least three times. Coconut juice should be properly cooked before you add rice. The food looks delicious. Keep it up Girl you are doing well 🇺🇸🤩🤩🇯🇲🇯🇲🇯🇲💯

    I was skeptical at first at how you were preparing the rice and peas, but in the end, it turned out nicely. Good job Shorn 😎👌🏾.
    As for the oxtail, it doesn't take no more than 45min to an hour to cook if you season it overnight and pressure cook it.

    Shorn two tins of peas to the amount of rice used would give a richer blend. Ratio of 1/2 lb peas to 1 1/2 lb rice🎉Use pressure cooker for oxtail

    Men love to cook in Jamaica, if you have a pressure cooker you can pressure the oxtail for 45 minutes then season it up and cook it down

    To replace pepsi/coke drink natural juice. Buy a juice extractor and make your own juice. Buy your fruits , ginger and create 100% juice. Coconut milk add more flavor. You can a add a table spoon of brown sugar (optional). Why you're blending the beans and coconut milk? Just add the beans in the pot add the milk , let it boil, add your seasoning boil 5 to 10 minutes, wash and add your rice. Shorn Jamaican don't begin to prepare rice and peas that way.

    ARWA that rice and peas looks really good!!! Looked even better after you served if on the plate!! Excellent first time try!! Your taste testers obviously loved it all!! Next time try cooking JA stewed chicken. It's a Jamaican favorite and goes well with rice and peas as well as yams, green bananas, potatoes and of course plantains. Don't know about Africa but in JA you can buy fried plantains in the freezer section of supermarkets and all you need to do I'd microwave or heat on the stove. Oxtail idles take a long time to cook - at least 3 hrs or when the meat is soft. If the meat falls off the bones it is overcooked. To get a great flavor, cook all the seasoning with the meat. There is also a bottled oxtail seasoning on the supermarket shelf. When you return to JA look at the spices shelf. You will be delighted! I think you might just get many JA spices in Caribbean stores especially in London and Birmingham. Ther's a suburb of London called Braxton. Go to the market there and you'll think you're in Jamaica!!!🇯🇲🇺🇸🇯🇲

    Doing the paper whole it’s a means of getting all the flavor without the heat. You can still cut small pieces and put it in, but the whole pepper brings out a nice flavor especially if it’s a scotch bonnet pepper! Sometimes you just need the flavor. You don’t need have heat in certain foods, you just need the flavor.

    Hi Shorn, oxtail is not as hard as cow foot. You can use the same seasoning option you did with the jerk chicken. Put it overnight in the cooler part of the fridge. To cook if not using pressure cooker, lightly fry in cooking oil, then poor everything into a deep pot with small portion of boiling water, cover the pot to cook. Continue to pour small portion of boiling water, until soft. Then you cook it down, in a stew style to complete.

    An idea for you when making the rice and peas.
    Red kidney beans- wash and soak 1 cup overnight or for about 3-5 hours. Then you can pressure for about 15-20 minutes depending on your pressure cooker, ensure it's soft. The rice and peas will taste better

    Hi Shorn 👋 just a little bit of advice it's best to use the fresh beans 🫘 instead of the beans 🫘 in the can your food will taste better 😋 the beans 🫘 in the plastic bag 🎒 is just fine remember when your food is processed it takes away the flavor but you did great secondly you will have to try all the coconut 🥥 milk and cream to see which one comes closest to the real coconut 🥥 taste then you just stick with that brand but overall you did a great job 😀 keep it up

    Oxtails takes about 3 or 4 hours to cook not 24 hours and red beans the dry ones don't have to be red red. They will turn lighter when u boil them until tender

    You just need a pressure cooker to cook the oxtail or any other meat that is very tough like goat meat or beef stew..
    You can also make dry kidney beans in the pressure cooker. Cooking dry kidney beans gives your rice and peas a lot more red color. try that next time. Just watch a video for instructions.

    Shona washing rice removed extra starch from the rice, you can have the rice sitting in water for 1/2 , that will clean up the starch.Best rice to use is Par Boiled Rice, grains are harder.

    All you need for oxtail ready with your ingredients hot your oil then brown your oxtail then put all in pressure pot or boil till soft add your ingredients strewn till finish. No 24hr not true. 😂🇯🇲💯

    Hi beautiful African sister,
    You are doing an amazing job.
    Now you can mix two different beans to make rice and peas.
    It does not take all day so cook oxtails. Just season it well, let it sit overnight. Brown it first or fry it, then add water and allow it to cook for 2 to 3 hours the add all the natural seasoning check regularly and taste. Or pressure cooking will cut the time in half. Finally all your questions can be answered on TH-cam 😊

    Shorn you can try replacing the red kidney beans with gungo peas which is also called pigeon peas. Jamaicans regularly use this peas preferably the fresh green ones as the dried ones will take much longer to cook. It is better to use the actual coconut and grate it or blend it and squeeze out the milk, but it takes more time and patience.

    Light soya sauce is salty and adds flavour but the dark soya sauce colours the meat.

    Coconut cream is sometimes sweet. it's used in things like piñacolada
    You have to cook the coconut milk until it looks like a custard before adding the rice. Loved your efforts and loved the whole show!!

    Hey shorna you shouldn't burn the sugar when your making rice& peas.. you add the coconut milk to the pot and boil it with the red kidney beans make it cook for at least 15_20 minutes seasoning the pot with tyme, pepper ,onion or scallion them wash the rice put rice in the pot cook.. you can use the kidney bean in the bag too

    Suger in rice and peas enhances the taste of the coconut milk, and the sugar goes in after you put in the water. Depending on how much rice you are putting in, half a tablespoon, to one tablespoon. When the water is bubbling then you turn it down to steam. Always use a folk in a rice and peas pot , not a spoon. Well down Shorn you done great for this time you’ll get better trust me 🥰

    Oxtail depends on what your cooking in a pressure cooker or regular pot, no1 but you shouls try,
    Season a day bfr ir morning to soak in season then when ready to cook about 2 to 3 hrs if u use a pressure cooker it takes an hr in electric pressure cooker maybe half
    So it depends on the pot you use

    The creme is sweet used mostly in mixed drinks (pina colada) milk is what you need for the rice n peas. Drink the sparkling water if you love soda 💕💕

    Oxtail can be cook in 2hrs under low heat with a good cooking after stuewing pot. After seasoning for a while.

    Good try. I love basmati rice. Maybe you should have used 2 tins oth canned bean. Some people add a little sugar and ginger and garlic. You can use onion but we usually use scallion. You can use red kidney beans and you can also use black beans and pinto beans. Different families do different things.

    Is a plantain is green Shine you can sprinkle a little bit of salt over it. Use a small amount of oil get it crisp and either sides cover it until it’s tender in the middle then you use something to press flat on both size and you’re good to go..

    @shornarwa, the peppers should go in the pot "whole" about 5 minutes after the rice is cooked AND before you turn the stove off. Otherwise, you will have a very, very, very peppery hot rice. A bit too much butter, especially with fried plantain, and the coconut milk. Also, Jamaicans are not big on the "sugar" if you are adding coconut cream (less sweet) ir coconut milk (more sweet). Since Jamaicans are also of West African descent including Nigeria, the plantains green and ripe are a staple. Not sure if both green and ripe equally. Let me know Nigerians. 🇯🇲💞🇯🇲💞🇺🇲💞

    Shorn l know that uou like Jamaican food. You could check out Morris Time Cooking, Deddy's Kitchen, The Jamaican Cooking Journey, I Jimmy Tv. Ms. Little Hot Kitchen, Jbud, Chef Ricardo, etc. You will get there. You can use red kidney beans, pinto beans, small red beans, or black beans. You can use can beans, but you have to strain the liquid, then place in pot with coconut milk, or cream, or butter, which ever with green onion,thyme, garlic, salt, bay leaf, or pimento spice. Whenever you burn the sugar turn the stove down low. Then constant stirring , to prevent it from burning. You will learn, it takes time. Every Jamaican cooks differently, so add whatever you want.     You can still use the dark colour red bean it does give the rice a nice colour. I personally find that there coconut 🥥 milk gives. Better flavour

    Oxtail can be. Cooked in aaround 3 to 4 hours, you can marinate the night before and cook early.

    Put little butter in it and chopped up garlic and even put in a piece of rosemary with the thyme.

    3 measuring cups per can of beans , or it’s better to cook your own dry beans,also you need to shake the cans before you open it just to make sure all of the color comes out and not let in the bottom of the can

    SHORN: You should get a Jamaican cook book. Ask Dee to get you one. The coconut cream is thicker or creamer but you can use any one of the 2. You can also use the coconut powder. And when you don't have those you can use Gloria can milk. You need to come back to Jamaica and spend at least a week in a home, not a hotel.
    .Shorn I dont know that kind of cooking. Just hope it turns out ok.

    You have done excellent, The Red Kidney beans were okay, to get your rice red, you must soak your beans/peas overnight in water with garlic

    If you are going to use the dry red beans, put them to soak in water, over night. Throw off the water, then put them to cook in water. When the beans are soft, then add the coconut milk. And season the pot. No sugar. When the coconut nut milk starts to boil, then add the washed rice.

    Wrong!!!! It doesn't take that long to cook well seasoned oxtail. Couple hours (3 to 5 hours) for oxtail, unless you have a pressure cooker, then a little less than one (1) hour should do.
    Yes, Jamaican men in general are raised to help themselves. Cooking, and a few things....

    If you have a slow cooker you can slow cook your oxtail ,,season and left to marinate a couple hrs or overnight, place in slow cooker with all your top up seasoning to taste, not too much liquid,just like 2 pot spoon ,because slow cooker don't evaporate much

    Shorn u can cook oxtail using a pressure cooker. We do not use 24hrs to cook any meal . Love u Shorn from Jamaica 🇯🇲

    Hey Empress Shorn good attempt......the can peas wont give you the desired colour unless u use alot.... So next time try cooking the peas from scratch, you will get a better colour....
    You let the peas cook, and after its ready you add the coconut milk along with ur seasoning and spices, you then could add the butter and little sugar then.... You dont need to melt the butter nor that sugar method U were doing... When the seasons boil you wash the rice and let it simmer as you did before....

    Shine, the duck beans is the one that gave the rice and beans that lovely color with the coconut milk. If that’s what you’re trying to do the darker beans is the one that big green light color where is looking one that’s a that’s a soup and stew so the one that said kidney beans that’s when you need.

    Most Jamaican men can cook very good in terms of rice an peas you get the uncooked peas and pressure the it then add a little salt to flavor add your seasonings teast then your coconut milk
