I been reading the manual and finding the Speedi and Combi are different animals. Speedi would steam for 20 minutes before starting crisping but Combi reads after coming to appropriate steam level starts crisping for set time. Doesn't have a default streaming fixed time like Speedi. Only Combi baking says 20 minutes steaming then starts bake fuction for set time. One definitely doesn't transfer to the other, each has a learning curve so have to rethink uses.
I made this recipe and my chicken pieces came out hard on top from being directly under the upper heat source. Even my dogs had to work at chewing on it! I don't "get" how Benji Frank's didn't come out like mine did?
